    ANANAS KA ZARDA
    Preparation time: 15 minutes
    Cooking time: 30 minutes
    Serves: 2
    Course: Dessert
    Ingredients:-
    ¼ cup ghee
    2 tbsp Raisins
    2 tbsp Almonds, chopped
    2 tbsp Cashew nuts, chopped
    A pinch of Saffron
    2 Cardamom pods
    1 cup Sella rice, soaked
    A pinch of salt
    ½ cup sugar
    ¼ cup Mawa
    6 Pineapple slices
    2 tbsp Ghee
    1 tbsp Castor sugar
    2 tbsp Pistachios, chopped
    2 tbsp Almonds, chopped
    Process:-
    ● Heat ghee in a pot, add raisins, almonds, cashew, saffron and mix well.
    ● Add water, cardamom pods, sella rice and salt to taste. Cook the rice.
    ● Add sugar and mawa and cook till the sugar coat the rice evenly.
    ● Do not mix it. Cover it with a lid and cook on medium flame for 7-8 minutes.
    ● Remove the lid. The sugar crystals will start to melt. Now gently give it a stir and cover again.
    ● In another pot, place pineapple slices add ghee, castor sugar and cooked rice and slightly
    press it down.
    ● Add mawa, pistachios, almonds and cook for another 10-12 minutes.
    ● Turn off the flame and serve hot.

    Mouthwatering recipe. I envy the Le Cruset Dutch oven you used to cook the rice. However I cannot afford it. 🙃What other cookware or grade of cookware do you suggest for this recipe? Any heavy bottomed pan should do?

    Hell yeah! I have been searching for this recipe for a while. I had these rice in my childhood in London in an Indian restaurant. Since then I have been searching for this special flavored Zarda. I am going to make these first thing in the morning. The only problem is we only have access to Jasmine or Basmati rice. I couldn’t find Sella rice here in California. Hopefully the basmati rice will do the trick.
