Beautiful. However, reduce the oil, the spices, onions, garlic, ginger and vegetables will make the soup testy without using all that oil. Less oily food helps keep BP, heart, diabetes, unnecessary weight etc out of the way. For nutritional purposes, the shin of egg plant is very important, you can cook with skin on.

Sister Betty why don't you use pink salmon for Ghana home salad nede Paa. You can use tin mackerel from Lidl or Aldi if you don't have smoked dried fish. Herrings will be. nice. Anyway may be you like pink salmon. I will use pink salmon for Ghana homemade salad nede paa.

I believe she used Cod salted fish in substitution of koobi/ momoni.. you can find it in the international aisles in most supermarkets in UK like ASDA, Tesco’s and Sainsbury’s or from your local African or Asian shops.. hope this helps 😊
