    I always wondered what I was doing wrong when the bottom of the jar cracks!! This really demonstrates the adage: “Knowledge is power!”
    Also, genius idea to use canning lids as a buffer for the bottom!
    This was such an interesting and useful episode!! I’m such a huge fan!!!

      ball doesnt always make the best jars either ive seen a few cases with bad quality glass and bubbles in the glass

    I’ve lost 2 jars in 40 years. Both times the bottom broke. Both times it was with green beans. You are a great educator. So much good information.

    Rose great teaching. If the New canners don't have extra rings they can use an old hand towel or a tee shirt in the bottom of the canner.

    I had a thermal break tonight. I wasn’t positive why it broke but suspected that was it. I remembered seeing a video title of yours about breakage. Just watched and it was confirmed! Thank you! I didn’t know about the other breaks. I just love learning the science of things.

      @@RoseRedHomestead : the jar that broke contained carrot soup. Other than needing a good bath, the other jars were fine. Within a week, all jars in that batch got consumed. Had lots of company. Best wishes and thank you for producing these very informative videos. And: after seeing your video on the Instant Pot Max I bought one the next morning. I loved the one I already had and this will be very useful for a family of just two.

    Excellent information! One common way of causing a temperature (and pressure) differential in canning is the premature release of pressure. I had a roommate in college that wasn't the brightest bulb and he would always take the pressure regulator off at the end of the canning cycle and let the steam escape loudly. He would always grin and say "I know, but I'm impatient". I think that may be a more common practice than people admit, though it isn't safe for the food being canned or for the jars.

    Wow! I thought about going to the end of the video to see you break the jar. Boy, am I glad I watched it all. Actually, I was doing a lot of things wrong. I tighten as hard as I can, I put my jars in the canner right on the bottom AND I've filled to the brim! I'm so surprised that I've never broken any jars. I sure learned a lot today. Thank you.

    I really appreciated this presentation. From watching this video I figured out what I’ve been doing wrong: I was immersing the full jars into full-boiling water. My new plan is to only “pre-heat” the water bath to very warm/up to hot, but not boiling, and then bring up to boil before starting the timer. I’ve just now done a couple dozen quarts using this strategy and it’s worked well so far.

    I had a jar break in the canner for the first time. I could not figure out why. Although it was one jar, I was upset I lost the green beans and the jar in this day and time. Funny this video was made 3 years ago and so informative. Thank you for all of the great tips! I will make sure I follow them.

    I’ve got tomatoes ready to be harvested from the garden so I will be canning them. This will be my first attempt at canning. I am so grateful that you take the time to extend your teaching skills and knowledge to the online community. I am watching and rewatching because I very much value the “why” behind this process, whether it be water bath or pressure canning. Science was one of my strongest subjects in school many years ago and I am really enjoying the chance to learn more. Thank you so much!

    Unbelievable Rose! You've filled gaps in places I didn't even know I had places, (and makes sense now I know you taught statistics). Of course, you're familiar with the saying, "what you know, what you don't know and what you don't even know that you don't know", how am I supposed to ask a question about something I know nothing about? all while being a teensy bit terrified thanks to rumors of botulism etc? I've been watching and listening so carefully, replaying again and again trying so hard to learn because I'll be damned if I'll be the cause of me and my loved ones getting sick! Thankfully I'm learning from what I consider the Best by virtue of their life experience and particular audience and it's not hard to find you folks when you keep turning up at the top of the search query due to popularity. But even with all I learned and thought I knew; this video has managed to tie up all the loose ends and then added a bow. Thanks to your non-judgmental style I feel safe enough to confess that you've helped reform another wicked disrespectful glass jar and bottle basher, me. 😉

    Your explanation was clear and thank you. Close to 50 years ago, I would have jars break and it was from thermal shock. It was all my fault. I followed what my Mother-in-law told me to do and it was wrong. I learned then what I was doing wrong and change and no longer have a problem. Surprising how reading your canner booklet directions can help.

    Hello there, like you I have been canning for 50+ years and something I learned from my mother was to store empty jars with the bands on them (no lids) to protect the top edge of the jars and have the bands handy when your are ready to use the jars. Back in the day of Jem Jars (Canada), she stored the glass lid with the jar and band without the rubber rings in place. Each rubber ring was stored inside each jar as they, like Tattler, could be used multiple times.as long as there are not damaged. I do not recall ever having seen damaged jar rims. Chipping can be quite a problem.when jars are in storage or being moved. I should also mention with the glass jar lid and band, the band was not put on tightly as she wanted the jars to stay aired, just protected.

    I have those Atlas jars too! It was very exciting to see them. I got them at a thrift store years ago and it took me a while to realize they are only 30 ounces (at least the ones I have). I couldn't figure out why I was getting more than 7 jars for a 7 quart recipe. hahaha. Anyway, I've been enjoying your channel and subscribed about a week ago.

      Thanks. The one I used in the video is 20 ounces and originally came with spaghetti sauce in it. That is why I bought that brand of sauce. I have them in 20, 24, and 30 oz. Sadly, they don't use those jars anymore, so I quit buying their sauce!

    So far ive been very aware of those causes and have avoided a sad loss - I found it so hard to watch the sacrificial jar educate us all - 😟 #RIP Jar.

    Great video! You were brave to crack that icy jar in boiling water. Jar lids are a great solution to cushioning the jars. I have also used vegetable steamers.

    I had purchased brand new pint jars and upon inspecting them when I took them out of the case the jars had tiny air bubbles trapped in then I photographed them and contacted Ball and they refunded me. They said I could use them for storage but to never put them in the freezer or can with them. They had no explanation for why it happened.
    I have lost one due to temperate issues, sauerkraut and it was with water bath. I heard it pop when it happened.

    With the shortage of jars and lids currently. I have been treating mine with kid gloves and only silicone go inside to either debubble or get the goods out. Great informative video..tyvm

    I used to make my moms pickles, and it didn't say add hot brine. After the bottoms of the jars broke off several times while making these, and I lost everything in the jar along with the mess, I finally figured out it should be hot brine.

    I can verify that over tightening of the band will break the jar. I had one break on me so far. Soup, what a mess. I use the free chop sticks you get to remove air bubbles. Thanks for the great information. Happy Homesteading

    Very good information. I have recently purchased jars from a well known manufacturer that experienced stress fractures like example 2 with the lightening like cracks and hairline fractures just from being washed in the dishwasher. If they can't withstand the dishwasher when new, they certainly won't make it through the pressure canning cycles. Needless to say I will be returning those for a refund. When only a one or two companies control the entire market quality tends to suffer.

    Thank you so much for demonstrating this! Last year I had one jar break just like you demonstrated for a temperature break. I thought it was just an old jar, now I know it was Thermo shock!

    Wonderful video! I've had the thermal shock breakage where the entire bottom falls out twice. Just to a few but so glad I know why. I had just assumed it had a crack or something

    You are an absolute wealth of knowledge. Thank you for this valuable information. I knew about the bottom breakage but didn’t know about the other types. I think a little common sense goes a long way when using glass jars.

    I was really conflicted while you where using that metal knife for debubbling, while saying always follow the rules. Im so happy, and proud that you set an example of doing things different when there is new information. And stubbornness was set aside. ❤

    I came here tonight..HAPPY NEW YEAR! because I had my FIRST jar break. It was as you demonstrated, a "thermal shock break. Two pieces that fit perfectly together once I got the pieces. I even took pics as I was curious as to the "Why" behind it? It was a qt. of turkey stock. The others were fine. As far as I could tell, I removed the jars, two @ a time, from the oven & then filled with hot stock just strained out of the slo cooker. So hot jar, perhaps even hotter liquid. The canner's water was hot as well. The only thing I could think may've contributed 2 the breakage was maybe I waited too long to fill the jar & it had "perhaps" cooled a bit yet the stock was still very hot. (There was a short interruption). While awaiting the pressure build up, I heard the "crack" & KNEW a jar had cracked. Since I had 2 jars just filled with water 2 balance out the load, I hoped it was one of them but, alas, it was my lovely stock. Do you or anyone else reading this think the short cooling off of the jar then the added hot liquid then to the hot canner was the problem? Thanx!

    Joanne’s has silicone spatulas that I absolutely love, one of them is a long straight spatula that, I think, is the perfect tool for de-bubbling jars. In fact, I think it’s also less expensive than that plastic stick they’re trying to sell us on…especially with a coupon.

    What a excellent video. Even though i have been canning for a really really long time, i always learn something new from your channel. Like you, i don't need to buy a measuring device for headspace or a tool to debubble. A chopstick, for me....works just fine. (must be the scottish part of me). Thank you again Pam, your channel is the best.

    My concern about breakage is when I buy Used Canning Jars at the Thrift Store. You do not know how that jar was used. It is a risk especially when it was difficult to find new to buy. Excellent video by the way. Your science background is a true win for all us students out here. Thank you for all your efforts to inform us.

      Thank you! You could always bring them home from the thrift store, fill them with water and run them through a water bath process to see how they do. Jars are starting to come back to our local stores. I hope it will be that way across the country soon!

    I am well aware of all of the breakage types you demonstrated but I enjoyed this vid very much. Why? Because it is just like being in Science class and you get to do the experiment yourself - well you did it for us - which is more fun than sitting in a desk (on a sofa) while someone tells you about it. This vid is almost as good as doing it myself - which I can do if I want to sacrifice a jar but why bother when you have already made the sacrifice for us. The only difference is the level of excitement and since I don't have a mess to clean up this way, this is exciting enough for me. I'm sitting here smiling.

    Oh…it happens! I had my first thermal shock bread last month. Yep…I packed sausage in the jar, and one was still a bit frozen, crusty and bendable. I thought by the time I fill the rest, and the water warms, then heats, it will be fine. Oh man…I pulled the jars out and that one blew the bottom off! I learned my lesson.
