    The struggle is real but I WILL WIN!
    Weight gain has been a battle I’ve struggled with for most of my adult life. Like most of us, I’ve tried every diet out there. While they worked to get the weight off, they weren’t sustainable and the weight would come back. And it brought friends (as in more pounds). My weight slowly crept up to 347 pounds by the time I was in my mid 30's hit. I had high cholesterol, high blood pressure, diabetes and bad knees. The orthopedic doc handed me a catalog for knees. That’s when I realized something had to give. That’s when I discovered plant-based eating through a food-based cleanse program run by two naturopathic doctors in Santa Monica. I literally went plant based overnight. I didn’t know it at the time. But I’m glad because I may not have kept it up. Within 21 days, I lost a significant amount of weight - while eating foods that were enjoyable. Over the next couple of years, I’d lose a little more weight, but because I was eating ‘vegan junk’ food, the weight loss slowed to a halt. It wasn’t until I met Chef AJ and began taking ALL of her classes that I learned about the power of eating plant-based foods that are free of processed ingredients, oil and sugar. What a power that is! Once I started to eat more of those foods, the weight loss started again. I admit that I wasn’t always the prize student because I continued to struggle with [what most would call] food addiction, but I'm looking at it as a food 'sensation' - rewriting it with the help of work I've been doing with John Pierre (JP). I was always looking for a way to numb my emotions and food seemed to be there for me. I just didn’t realize what it was doing to my physical and emotional health.
    In time, I got better and better at living a whole food, plant-based diet. Weight was coming off and I was feeling SO much better. But my marriage was causing me so much stress and I didn’t realize it. So, the weight would fluctuate because I’d stumble off the ‘program’ and pick up more weight. It wasn’t until my marriage ended and I realized just how unhappy I was that I finally lost the remaining weight that plagued me for so long. It’s been nearly 3 years since then. Thankfully, I’m at a healthy weight and feeling so much better in every way possible. I love feeling like I have my life back on track.
    I am still very much aware that the bad-food-monster is, as Chef AJ used to say, in the corner doing push-ups waiting for me to have a moment of weakness. The struggle is real and it’s something that’s on my mind on at least a daily basis. More and more, I’m realizing that I need to do two things (that I hadn’t yet mastered) in order to put myself in even more control of this situation: workout and deal with the real reasons I’m eating emotionally…
    A testament to the power of food is that I lost my weight without very much exercise. Most folks don’t believe me when I say that. They think I either worked out like an Olympian or got gastric bypass. I did neither. IT WAS THE FOOD! And, yes, I ate rice and potatoes galore. But I also ate a heck of a lot of vegetables. I know it’s not for everyone, but it worked for me.
    The next direction my journey will take me on is to do a deeper dive into myself and what is missing that’s sending me to food for comfort. I should be the source of my comfort. And I am actively working on that. Armed with what Chef AJ, Doug Lisle and JP (John Pierre) have taught me, I KNOW I’ll succeed. Slow and steady wins my race.

    Chef AJ, I have to say that this is one of best interviews I've ever seen on your show. Rebecca is so lovely! She has obviously spent some serious time learning to get at the root of some of the issues that drive her challenges with keeping at a healthy weight. I really appreciated how forthcoming she was with her personal struggles. Thank you for sharing her with us!

    OMG!! Thank you! I have struggled since I was ten years old. I am 52 now and believe this is what I have been looking for. Sounds like I need JP too! Food has been my everything. I don’t know how I have escaped from more severe health issues! Thank you for sharing Rebecca! Thank Chef AJ!

    I would love to have an enchilada sauce without salt. The biggest problem I find is finding a good red sauce without tons of salt.👍🏼💪🏼💪🏼💪🏼

    I was never big until I hit 40’s. Lost 25 lbs the first time. At 50 had another 25 lbs to lose and now I have 30 to lose at 62. The last weight came on from stresses of parent’s death. It’s more of a struggle now! I’ve been a fat vegan for 4 years. Now I’m WFPB! I love it. Down 3.3 lbs in 2 weeks. Sugar addiction here. My new motto is BUT DIDN’T. I may have wanted it, but didn’t!

    I’m the same age as Rebecca and I’m also Mexican. It’s so difficult to explain to some of my family and friends what I’m doing. It would be great to have some great vegan Mexican recipes in my back pocket. I hope she comes out with a cookbook! I’m also in the Pasadena area!
