I made this but slightly different.
I made this with ground cumin , dry roasted red button ground chillies , dry ginger and garlic powder, Chinese all spice, (garam masala)
And taste was so good. I will try this method.

do you add the cumin and red pepper to the meat marinade or just sprinkle it while you barbecue?
Yeah I think the author forgot to mention that they put or chilli powder or paprika clearly there's something other than just cumin and salt going on at the end

That’s not a marinade. You need liquid to marinade.
Next time, add oil, an egg and some shaokao seasoning, heavy on the cumin.
