There is a spike in current when the motor starts, this is called inrush current which only lasts for a brief period. After the inrush current drops, the electromagnetic field is weaker and the plunger will drop.

The strength is determined by the current. A coil of wires will have a stronger magnetic field than a single wire. Even in a coil, a low current will create a weaker magnetic field.
Hello, my fridge was not cooling on both sides. I just replaced both the capacitor and start relay. I plugged the power back on. I hear the buzzing sound for 10 seconds then it stops. Then it comes back on again later. Does this mean the newly installed parts aren’t working? What else can I look into?

You could try matching by looking for a number on the side of the relay, and searching based on that number. @ then your video diagram is wrong because that coil is still flowing with current which means the field is still active.
