Definitely, go for it. Germination success rate is way better than I expected. If you do it during summer months, it's easier because the plants prefer tropical temp.
You can buy water spinach seeds from Amazon if you're in the U.S. or Europe and your local government doesn't prohibit. If you're in South East Asia or tropical regions, just go to a garden center. Or better yet, go to the country side and get some from the ponds :)

And once it is filled, do you do water changes for the guppies inside? If so, how much of the water do you replace and how often? I'd love to do this in my own home!
Thanks! I used a cheap aqua soil, called Senda. It's a local brand which you may not have in your country. I think any well-known brand will work better (Fluval Stratum, Aqueon, etc...) You can also do Walstad method and use soil garden + gravel (I hate dirt, so it's a no for me). As for gravel, it's just brown/black gravels, 2-3 mm in size. Again, I went to a local fish store and they just have no-brand, cheap gravels for me to buy >.
Yes it should. Unfortunately, I harvested it and dismantled the aquarium after it outgrew my grow light. I'm doing this for fun but there is nothing stopping us from growing food and fish at the same time (using bigger tank of course :)
They should sprout roots with only the stalk. You don't need to grow them from seeds. I recommend trimming the old leaves from the stalk and just place them in your aquarium or a cup of water until the root sprout.

Can you actually harvest the kangkung and will it regrow after being clipped? Kangkung is my wife's favourite, so could be a win win situation.. ;-)

How do you maintain this tank?
I was doing partial water change (30%) once every 2 weeks using a turkey baster. Trimmed dead leaves. That's all.
How about oxygen level in water?
I have an air pump that runs periodically to keep the water aerated.
