It’s the perfect dish to serve as pulutan with ice-cold beer, but it’s also great as ulam with rice. That’s the versatility of tuna kinilaw! And this time, Chef Tatung shares a super simple recipe for this vinegar-cooked fish with a twist. Coconut cream or gata is added to add extra creamininess and linamnam to the dish. INGREDIENTS
For the marinade:
salt
1/4 cup vinegar
For the dressing:
1/2 kilo tuna fillet, diced
1 thumb ginger, minced
1/2 small onion, minced
1/2 small cucumber, sliced
1 green finger chili, chopped
2 red chilies (optional)
1 tablespoon fish sauce
1 tablespoon sugar
2 tablespoons calamansi juice
1/4 cup coconut cream
2 tablespoons spiced vinegar
wansoy or cilanto, for garnish

Dito sa northern mindanao.. hindi kami nagkinilaw kung walang tabon2x, suha at bahal na sukang tuba.. iyon talagang masarap na kinilaw
Iyon ang mas masarap. Tuba or bahal. Suha at tabon.tabon. Hindi yung spice vinegar. At walang kamatis.

Hi chef! For variation, instead of tuna, pag nakakabili ako ng sariwang dilis na medyo malalaki (hindi yung tuacang), kinikilaw ko rin, inaalis ko yung spine at ulo, yes-medyo may effort , pero mas madali maluto sa suka at mas matamis ang lasa, kaning bahaw lang ang katapat! Yum!

In my opinion, the best kinilaw is in Cagayan de Oro. With Tabon-tabon and Suha recipe. But will try this also to explore how great food!

Tama, sa Mindanao mas masarap. Lalo na sa CDO. Hindi na nilalagyan ng kamatis, nakakawala kasi ng kagat yung kamatis. Instead of dayap, suha o suwa na nilalagay. Mas nakakagutom yung amoy ng suha combination ng cucumber. Tapos tabob-tabon, explosion yung lasa sa bibig. Sayang yung tuna, sashimi grade sana kaso binabad pa sa suka. Pag ganon huwag mo na ibabad sayang yung quality naluluto sa suka. Diretso mo na sa timpla. Mas masarap gamitin yung bahal o tuba kaysa spice vinegar, may sariling timpla na kasi yung spice vinegar.

Tama po yung sinsabi mo na pag sinabi "Kiniliaw" Raw and if "Kilawin" Cook. Marami na kasi akong narinig lalo na dito sa youtube lalo na sa norte kilawin whihc is wrong. Keep it up po.

Hello Chef Simpol. Tanong po. Bakit dapat e soak muna or marinate muna yong tuna? Why not add mix directly or right away with coconut po? Salamat po.
Oo nga. Sabi kasi sashimi grade, hindi na kailangan ibabad, naluluto yan sa suka, dapat deritso na sa timpla. Marami namang sangkap para mawala yung lansa ng isda. Dagdagan lang konting luya.

Paano kung di ako kumakain ng raw fish pero gusto ko yung recipe? Pede bang lutuin ng slight yung tuna bago ihalo dun sa dressing?
sinuglaw na yun hindi na kinilaw its really up to you kasi ikaw naman kakain
Ibahin mo na rin yung pangalan ng recipe. Pag sinabi kasing kinilaw, raw yun. Pagniluto mo na, iba na yun. Naluluto naman yun ng suka. Pero masarap talaga pag bagong timpla yung hindi pa naluluto ng suka. Kumakain nga yung ibang Pilipino ng sashimi kasya kinilaw. Kung iisipin mo mas masarap yung kinilaw dahil maraming sangkap.
