It would be nice to see a ‘story so far’ summary and short tour of your property and your visions for its future. I realise that time is short and the DIY is your first priority and not YouTubing but if you share your dreams (and your challenges) people will be hooked and support you from all over the world if you want. It is great to see things transform, particularly when they are sleeping beauties like your chateau. Anyway, keep up the good work, best wishes.

The Only observation I want to make is:
Use lime mortar instead of Portland cement.
It was a lime based mortar used in the repair, although it does look a bit grey on the video 👍🏻
That like morta dired to work one day? Needs 3-7 days keep moist to dry slow and carbonate

Did you salvage all that stone from taking a building down on the property? Good foresight for keeping it all if you did.
We salvaged some but a lot of stone was inherited when we purchased the property from buildings previously on the land.
