Or had to pick your own peaches too early because the birds or bugs were eating them? Watch this video to see how to quickly ripen peaches indoors so you can enjoy that amazing peach flavor and all the juice that comes only from a ripe peach.

    This only works if the peach has been plucked from the tree at the right time. If they are not picked at the right time, the peach may not ripen at all. Instead the peach will go firm-soft and will rot.

    I have 3 peach trees and pick a few hundred of these gems. If you plan to store peaches for a couple of weeks, they in fact should be picked a few days before they ripen. One reason is the the peach swells as it grows close to being ripe. If you wait too long, the fruit will grow against the branch and you will cut the skin when you try to pick the fruit. It's a bit of art and science know precisely when to pick. I have never had much difficulty ripening them inside, but I plan to try this method to see if it produces a better tasting peach. You can extend the life a bit by putting them in the fridge. They stay (get?) hard but some people prefer some crunch to them.

    Thank you for the video. I just got 30 peaches from a friend who got them from the store. they are no where near being ripe, so im trying your way to see if it works. How many days would you suggest for them to be under the cover

    We had someone buy a box of peaches from us. They were slightly green to reduce bruising in shipping. She said she was going to use the peaches for canning and wanted them slightly green. They took them home on a Saturday and proceeded to can them on Sunday. She then contacts us that the stone wouldn't release and they were mushy. I think she should have waited a couple of days before proceeding to can the peaches. But she said she has been canning for 40 years and knew everything about this procedure.
    She now wants a replacement box of peaches.
    I do not know this person except by chance meeting at a farmers market.
    What should I do?

      Wow, every once in a while you run into someone that ends up being a poor experience. You are correct, the peaches would have processed much better if the peaches had been allowed to continue to ripen, soften, and loosen up around the pit. If I were you, I'd give her money back, because what if another poor experience comes from her canning the replacement box of peaches? Smile and move on and enjoy all the other positive experiences you have from providing something that is highly valued to so many. Hope that helps - and thank you for watching, and writing.       Were these freestone peaches? If not even over ripe a cling peach will not release the pit ... all depends on peach variety.

    Do you wash the peaches at all?? Before the pillow case bath?

      jolivar, we actually do fill the harvest buckets (typically 5 gal plastic buckets that we get from either Home Depot or Lowe's) with the peaches as we go, then fill the bucket with cold water from our outdoor sink and let them sit for just a bit. That gets any spiders, earwigs and other "undesirables" to float up and be skimmed off. Any bird dropping and such are addressed this way as well. Then, we pick take out the peaches a few at a time and run them under a gentle stream of water while rubbing them all around between our palms. Then, the are set out of a counter top on top of towels to dry. After that, it's to the pillow case. I hope that fills in the gap in the process a bit better! Best, DFJ

    Do you wash peaches before covering them?

      Maryanne, depends if there is a lot of dust or bug/bird residue. Rinsing is a good idea, let dry completely, then proceed. Thanks for writing! Best, DFJ

    Pretty confusing - what's wrong with the old-fashioned paper bag - seems to work OK?

      sbranagh - many people use that method, we like that you can take on a relatively large quantity with this method - although I suppose you could use several paper bags. Thanks for writing! Best, DFJ

    When I do it they all ripen at totally different rates and most start rotting before they are edible. I’m giving up buying peaches.

      Ripening produce can be a tricky and sometimes a frustrating process. We have had so many seasons of a weird freeze late in the Spring that our trees haven't produced much. I THINK we are getting some apricots this year...fingers crossed. Best to you, DFJ
