I know Rider Medusa does, but from what I have researched online, (Cirnopedia, FGO Wikia, Grand Order Wiki) Gorgon does not have the divine trait.

Maybe it was a special enemy-only or quest-only trait? They've done that before, for specific quests and such...

Just think about her final ascencion, covered in a set of white and gold clothes and very feathery white wings almost like a Goddess. Plus, her Monstrous Strength skill still reduces her Divinity like Medusa, but she wouldn't have anything to decrease if there was nothing left.

And to answer your second question: Enkidu is literal embodiment of Enuma Elish, which in the purest form, are the chains of heaven that Gilgamesh displayed in UBW. Gilgamesh's NP is called Enuma Elish because I believe when Ishtar used Gugalanna to kill Enkidu in Fate Lore, Enkidu essentially gave their everything to Gilgamesh cause the two were the originals bros before hoes; and that gave Gilgamesh one of the few Noble Phantasms he didn't have.
PhoenixAzureGaming Enkidu was a Divine Construct meant to be a natural counter to Gil, so the Babylonian gods gave them the power to use Enuma Elish (representing Babylonian creation myth), because you can only counter Enuma Elish with something of equal power (another Enuma Elish in this case).
Still, Gil and Enkidu's Enuma Elish differ from each other. Gil uses Ea to sever space to reveal the "Truth" of the World. Enkidu's Enuma Elish pours the power of the Counter Force through themself to pierce the opponent.
Mystinen It's not something so symbolical. Just as Ea is truly nameless but Gilgamesh just decided that was boring and named the weapon after the God Ea, he named it's only True Attack after the Creation Myth of Mesopotamia. They are the closest of friends, and Enkidu's NP as well has no real true name, as it is simply himself doing what he always does; changing his body to turn it into a weapon, just a very special "weapon" in this case. So like Gilgamesh, he adopted the Enuma Elish name.
