So the crispy texture on the exterior of the meat, (brisket, ribs etc) is called the bark created by applying a blend of spices called a rub and then being slow smoked and cooked by an indirect fire. The rub process is called a dry brine, leaves the meat juicy and tender after the cook. Keep trucking, guys.👍
Did you state they smoke on soaking wet wood? They got burn pits where they transform the wood logs into charcoal, then they shovel the charcoals into their vertical smokers, where the meats cook.
Oh, sorry! My only expereicne was at a friend of my house who has a smoker... it looks similar to the ones at Lewis BBQ. When I saw him smoking it, he used soaking wet wood. It was sort of like pellets... and he had them in a jar of water before he put them in the smoker. Maybe there is more than one way to smoke meat... I sort of figured the way he did it was the common way. I am still learning this stuff. My mistake
Texas bbq is influenced by the German and Czech immigrant’s. The focus is on the type of wood used and the “rub”. Our belief is that if you have to rely on the flavor of the sauce you’ve messed up. I love bbq and sincerely appreciate cultural and regional difference’s.
I had Lewis BBQ 🍖 while passing through and it was fantastic. Well Worth the price. I can’t comment on Rodney Scott’s, never tried it . Lewis BBQ is really Texas Style and not Carolina style according to what I’ve seen on TH-cam. Lewis himself supposedly worked at Franklin’s BBQ in Texas
The most expensive raw picanha will be 25 USD a KG , So you can buy 3 KG of picanha and with the rest of the money will be plenty for the coal and salt , let´s say we add more 25 USD and buy 48 X 473 ml cans of Stella artois . Yep , i think i will go with this idea instead of the texas smoked meat ( not BBQ ) and have a party since you can have 6 people and each have 500 g of picanha and 8 beers 🤣😂 Big kisses on you 3 🥰😘
For me the South Carolina takes the podium as best food in the east coast, Brazilians make best stake, but the south makes the best smoke pork, and dont even mention how good the corn bread is

Hmm, for this kind if restaurant, you'd have to cook the mici in the smoker. Which is an interesting idea! Not sure how smoked mici would turn out. But, in general, I think mici would be a hit in the States... why not? They're delicious
I love everyone of your videos, but I need to correct you on this one. The best BBQ in the United States is in Kansas City. Second is probably Memphis and then Texas. I am sure South Carolina BBQ is good, but you need to visit Kansas City and Memphis to try real American BBQ.
