The Only Chili Oil Recipe You Need

  • Homemade Chinese Chili Oil
    This is the only chili oil you'll ever need. Incredible depth of spice and flavor. You can add this to absolutely any dish of your choosing... rice, noodles, vegetables, meat, dumplings, and etc. An incredible topping, but also a very necessary ingredient. This is a must-have ingredient to have in your pantry. Learn the best way to make these from square one. Add Taiwanese and Chinese cuisine into your cookbook

    Recipe
    ( I enjoy using this mix of 3 different pepper flakes, but you can substitute all with Sichuan Chili Powder)
    - Asian Red Pepper Flakes (Coarse) 1/3 cup
    - Asian Red Pepper Flakes (Fine) 1/3 cup
    - Sichuan Chili Powder 1/4 cup
    Spices
    - Sesame Seeds ( 1.5 Tbl)
    - Fennel Seeds (1/2 tsp)
    - Sichuan Peppercorn (1 tsp)
    - Star Anise (2 pieces)
    - Cloves (2 pieces)
    - Oil (2.5 cups) Vegetable or Canola
    1. Mix all your Chili Powders into a heat proof bowl, make sure you still have lots of room in the bowl.
    2. Heat oil and simmer the spices (everything but sesame seeds) in for 10 minutes on a low heat, be sure you stir often, and watch ingredients to ensure they do not burn.
    3. Once the spices are finished, strain the oil out and then continue to heat it up on a high heat, get it hot but not smoking.
    4. Pour 1/3 of the hot oil into the chili powder mixture and then mix right away. Using only 1/3 of the oil will prevent chilis from burning. Then put in the sesame seeds.
    5. Heat the oil back up to very high temperature, until you can visibly see trails of light smoke. Pour in the rest of the very hot oil into the mixture and continue to mix until foaming subsides.
    6. Let this cool down and package into any nicely sealed containers.
    Done! The perfect Chili Oil. You can store this in the pantry for up to 3 months and even longer in the fridge.

      hey Patricia! I store this in any regular pantry, it can stay out for a long time. Maybe you can fridge it after 3 months or so, but it stays good for a long time even not refrigerated

      yes you can add anything you wish! I don't think salt is that necessary, but you can definitely throw some garlic in their to let it fry. Just be sure to not let it burn !!

    Curious! Why do you prefer the three chilli mix versus purely Sichuan chilli pepper flakes?

      you can of course only use Sichuan Chili Pepper Flakes and get great results! But having a mix with Korean peppers gives it a very distinct mild sweetness and smokiness that I absolutely love :)

    What if I used or has anyone used a mix of fresh chopped chilies the ingredients you used? I wonder how that would change or make it more spicy

      Hey ksv! I don't think it's necessary to use chopped chili's for this oil, if you want it more spicy, just use some more of the pepper flakes! Fresh chili's won't be too good for longer time frying. The flavor in this oil is plentiful enough with these ingredients :)

      I would have to say no :( Nothing beats wasabi and soy sauce when it comes to sushi, at least in my opinion. Maybe you could use it on some sushi rolls? But definitely not any Sashimi. Goes great with most other asian dishes though :D
