    I love your videos. They make me feel like I've stepped into a simpler time. I also love how you leave the mess ups in the video. It's totally relatable to me . Some TH-camrs videos are so heavily edited and scripted that you lose the human element. Your videos are a breath of fresh air.

    Okay I had to laugh so hard. I cannot even tell you how much I appreciate this video. My Grandma June, who grew up in the 30s, would also make Lemon Meringue Pie! She definitely would double the corn starch and it would thicken up quicker. She would also use more egg whites to do the meringue so that it was extra tall and wispy! The funny thing is that she would always “accidentally” leave a few lemon seeds in her pie so that everyone knew it was homemade. 😅🥰 I miss her very much, she passed away two years ago. ❤️

    I absolutely LOVE your videos. They feel like home. As a lady born in 1954 and an avid baker, I hope you don't mind a few helpful hints. They are given with love. When separating eggs, the easiest way is to just use your hand. Crack the egg in a little bowl or cup, then pour the whole thing in your hand. Let the white fall naturally back into the bowl and, presto, a perfectly separated egg. Always strain your custard through a sieve and you'll have no lumps! Spread your meringue right to all edges to form a "seal" and it won't be watery. Your pie sure did look delish!! Keep those videos coming! ❤❤❤

    Separate your eggs one at a time putting each white into a small container. That way you’ll only contaminate one egg white if something goes wrong and not the whole lot. Egg whites won’t fluff up if there is any yolk in there. Especially for a pavlova. 👍🏻 it looks absolutely devine.

  • @catherinezilber7677
    @catherinezilber7677 2 ปีที่แล้ว +5

    One of my family's traditional desserts requires a perfect meringue. Separate each egg using a little custard cup, so if the yolk breaks in you can use it for something else. I also just crack the egg into my hand and let the white run through into the custard cup! Looks yummy, I love lemon!

    Interestingly many years ago, we were always taught when thickening with flour, cornflour or custard powder, that once the mixture was at boiling point, to remove from the heat, stir in then return to the heat. I think it stopped lumpy problems, so I have always done it. I too love that you show the good and the bad. Let’s us all know we are only human.

    Looks amazing :D ... a few tips, hit the egg on the bench not the bowl, you can also use the egg shell to scoop egg that falls in. Also, give short crust a go yourself, its quite easy and fun to make :D

    • @sallycormier1383
      @sallycormier1383 2 ปีที่แล้ว +2

      Yes! Counter top to crack the egg means less bits of shell and you can also drop the egg into your hand and let the whites run out between your fingers, tho I still do the egg shell to egg shell technique.

      Yes, I never heard of crispy meringue either. Soft and fluffy. Not baked like this, but put under the broiler for a few minutes until browned on top. Also, never saw milk used. This is more of a lemon cream type pie. This must be an Australian type of pie. Also, an Australian type of meringue. Very interesting to see how recipes developed in different places.

      It's definitely a Pavlova style meringue, where it'll have a crust and then be (ideally) fluffy on the inside. It turned out really well for her accidentally putting all the sugar in at once! I would definitely have freaked out 😂

    I appreciate that you kept all of your whoopsies in! In the kitchen, I am usually the one baking so I don’t mess up too often. However! I am constantly messing up any cooking I do lol baking is cool, but I am so jealous of how comfortable you are with cooking!

    I actually LOL when she dropped the egg yolk into the whites because that is 100% something I would do! I'm also glad she was able to save the meringue. Thank goodness for the internet. This pie 🥧 looks wonderful! Great work as always! 🙏🏽
