How did I only just find you!!??? OMG this video is wonderful. I have been making sushi for over 30 years at home thanks to a wonderful lady who owned a fabulous Sushi restaurant in my little town. She taught me in her kitchen in the 80s to make maki rolls. I didn't know you could roll a half sheet however!! So I did learn something new. I am wanting to try to make it at home and found your video. I'm nervous about buying the ingredients. I think I'll try a few rolls with just cucumber, avocado, and shrimp for now. And practice with that until I know I can make the sushi rice well and roll them well and cut them well. Then later try it with tuna fillet. Thanks for showing me how to make sushi at home. I made 2 or 3 California rolls and took some to where I work and my coworkers liked some of it. Sushi is one of my favorite Japanese dishes along with Sahimi and miso soup.

So I went and had a go at making some sushi again today after seeing your videos on making sushi. It's very hard to work out how much rice to make in advance, but I managed to make four small rolls and a big california roll from two cups rice. Will need more practice to stop overfilling the rolls though!

There is a restaurant here in Mississippi called nagoya’s and they make this dynamite roll…. It was this crab roll and it had this sweet honey sauce with roe in it.. so it was almost a light orange color with beautiful red spots in it… so so so good… I would love to learn to make those

A freezer ziplock bag (1 gallon) with a hand towel inside works great in lieu of a bamboo mat.

just out of curiosity, why do you use the mat on some rolls and on some you roll by hand and form it with the mat after?
