    600g flour
    270g water
    30g canola oil, softened butter or lard
    1,5 tsp salt
    500g sour cream or creme fraiche, 25% fat or more
    1 tsp salt
    a good few cracks of black pepper
    1/4 tsp freshly ground nutmeg

    1/2 finely sliced yellow onion
    1 handful sliced leeks, the green part

      @@jbconnor3 u can definitely have good tarte flambée in munster, that's Alsace after all. But avoid at all costs "all u can eat" chains. Just go to small restaurants, flams are cheap anyway

      Restaurants which serve Flammkuchen are not so common where I live. So all you can eat chains are pretty much all we have in terms of Flammkuchen...

    I love Flammkuchen! Part of my family lives in Alsace and we always visit the local "Bahnhofsgaststube" for eating Flammkuchen.
    They garnish the apple version with Calvados an flambé the whole thing.
    It's so delicious.
    At home we are using a baking stone. This makes the flat bread extra crispy.

      A turned-over sheet pan, preheated in the oven, works as well if you don't have a pizza stone. Makes a huge difference in the outcome of the flammkuchen's texture!

    Wow, I’ve been making Flammkuchen for years now without realizing it. I was just calling it ghetto pizza, and make it with stuff in my pantry since I live forty minutes from the nearest pizza place, and no one would deliver.

    The best Flammkuchen I had was topped with thinly sliced pumpkin, goat cheese, drizzled honey and served with some rucola. Sooo good :)
    Also I make the apple one regularly, always a special treat.

    I’m living in saarland a region near France and we have Flammkuchen everywhere. There are Flammkuchen-all-you-can-eat-restaurants and they serve all varieties of it.

    I was a brazilian little boy that lived 4 years in Strasbourg because my parents went there and we called it by the french name, Tarte Flambé. It was my favorite food rom my childhood and everytime I went back to France or Germany I had to go down memory lane and eat one!

    My GF and I (both half germans, me being from the alsace region) are actually calling these "flame cakes" since we both work with internationals and had to translate it a couple times and same as you we both just really liked that descriptive name and it stuck.

    Damn, I make Flammkuchen quite often, yet for some reason I never made the dough myself, the 99cent store bought dough isn't that bad (unlike store bought pizza dough, bleh!). Seeing how easy and convenient that thing is to make.... guess I'm going to do it myself from now on!

      worse is ... i done that recipe exatly like that because i had cheese and had no sauce... also no creme fresh.. and the dough was like that.. i blame me calling that a pizza now XD since it has a name already XD flame cake it is!!!

      @@Augustus_Imperator you probably did it wrong lol ... this can be made even in a PAN without oven ... it must be super slim and yeast is not needed because you want a crusty slimmy bread for this recipe and not a fluffy version

      @@MsTatakai of course it's not fluffy nor bready, it's without yeast, and it can be done in a pan like some kind of middle eastern bread or tortilla, but I don't know if it can be done in a oven. I cook every day since 10+ years and I totally love it and believe me, I know a thing or two, and I always try to learn, never tried something like this without yeast, and now I know why lol. it will be either uncooked, too hard or it will break.

    We don't usually even try to make pizza at home as it's basically impossible to get a good resoult with the low temperatures of a home oven so i guess i'll be trying "flame cake" instead, it does look very good indeed

    For a vegetarian Flammkuchen I highly recommed to put some smoked paprika to your Crème Fraîche. It is a perfect substitute for ham in terms of flavour.
    Btw, I have been waiting for this video for ages. Flammkuchen is one of the underappreciated and easiest dishes ever. (And my flatmates still use store bought dough, which drives me crazy)

      @@Esablaka I use that stuff for Tsatziki as well as for my infamous "Motherf**ing Quiche of Sorrows" (it's like a boss from a Dark Souls computer game: majestic, disturbing and seemingly impossible to beat, thus the name). Dr Oetker deserves a Nobel Prize for inventing it.

      @@TheMovingEye I personally ain't a vegan but I know ( and often cook with/for) them. It's great for tons of dips too. Just add some spices and ya suddenly have a nice dip for some vegetables or some flatbread. Another incredible vegan replacement product: the Naturata Vegan Mayonnaise. Its fucking amazing. Better than most non vegan mayonnaise i have tried (though there are quite a few vegan mayonnaise options out there now... this one is still by far my favourite. ).

    I've been to italy 3 different ocasion, went to 7 cities including naples, ate pizza in all of them, then on the same trip I went to germany and for the first time, tried this thing, and i'm telling you from the bottom of my heart this is better than any pizza in italy(from ones that I ate)

    I had those in an Alsatian restaurant in Paris and they have sooo many varieties! Some of the traditional Alsatian ones have sweet cream on top which was a very new experience for a pizza enthusiast like me.

    Flammkuchen and Federweißer, so simple but yet so good!
    What is also very delicious is Elsässer Sauerkraut (made in a roman pot) and Pfälzer Saumagen, maybe something you could do a video on later.

    I LOVE Flammkuchen!! They remind me of many motorcycle trips through our beautiful Germany… And remember, as with most baking products; the first one you make may be delicious, but the ones you make after that will be even better! I have spent a lot of time trying to master pizzas, croissants, French baguettes, etc. and the common experience is that the more often you make it, the more magic you ‘magically’ add … Guten Apetit from The Netherlands Andong!
    Edit: I rewatched the video to try and spot the reference to the unknown channel, but I could not find it. I like the idea though …

    Stumbled across this video and learn the history of the bake i have made for decades, my great aunt taught me to make this back in the 1981. It has become my staple for fridge clearing of leftovers, chopped fine in a food processor. My pesonnel favorite is with grated smoked sausage, part freeze the sausage and grate on the large holes of a box grater in a nice thick layer and buried under enough mixed grated cheese [Gouda, Edam, Emmental] to make a cardiologist have a stroke.

    A few months ago I ate the classic version in a Strasbourg restaurant, but topped with some Munster cheese, which is also from the region - absolutely wonderful, I fully recommend you try it out if you can get your hands on this stuff!

      Depends on if the extract is sweetened or not, doesn’t it? Admittedly, I haven’t been able to find one like that in my local supermarket in Berlin, but back home in the US I think the unsweetened kind was generally the most common.

    Reminds me of Langos from Hungary. I'm American, but my family has been making it for decades. We bake it, so it's almost like this. We often just have it with butter, but when I visited Budapest last year, they topped it with a variety of ingredients, usually sour cream, like this flammekuche.

    Watched your video today and was inspired to give it a go. One tip from me, try dropping an egg or two into the dough mix which will make it rise just a touch. It probably isn't flammkuchen if you do that, but my wife said it was the best pizza base she ever tasted :)

    So I can confirm that your video is following le original recipe.
    Only the “ leek “ is not used in the traditional recipe but it is a detail.

    Traditionally you’d sweat off the „speck“ and don’t use any leeks. ;)
    And for the Apple one: you’d usually get it flanmbeed with calvados.
    Most variations are pretty good though.

    Ich vermisse ständig die Flammkuchen Restaurants in Leinfelden-Echterdingen in Baden-Württemberg, vor allem die Zimt-Zucker mit Butter Flammkuchen. Living in the US just isn't the same. I love what you do, and I hope you keep making content. Also, as a half German, half American bloke, I have to compliment your English skills. You're truly great at linguistics, and your accent is very natural and isn't distracting at all. Again, love the content to death. Wish I had as much of a love for cooking as you clearly do.

    I was surprised Flammkuchen is so easy to make, so I had to try. One, it turned out delicious. Two, you were right on with the time: 45 minutes after I started, the edges began to brown

    Andong, I recently moved to Germany (for a month now) from Italy, and one of the first things I tasted was Flammkuchen. The Germans have converted me and I prefer that to pizza. Also I'm so glad I found your channel, I love your content and you're making me want to cook a lot more often

    Ich liebe flammkuchen! I loved flammkuchen when I was living in Germany. What I do now is making pizzas with pita bread for a similar result (not the same!). But today I am making a "coca" from my childhood.

    I make Flammkuchen with schmand, onions, bacon, small kassler stripes, feta and gratin cheese on top. Everyone who tasted it loved it.

    I tend to use a 50/50 mix of Schmand and Creme Fraice with Paprika, Chipotle and Garlic. And mix Hickory or oak smoked slat into the dough for a wood oven taste. Its then topped with red and yellow onions as well as some leek and thick cut bacon. Bake it at ~250-300°c in my grill on a stone. BBQ style Flammkuchen
