Fish head is actually a pretty staple affair in the Eastern part of India, especially Bengal and Assam. One of Bengal's signature dishes is a "Muri Ghonto", which is a slow cooked fish head curry with spices, lots of dried chillies, hot pepper and and some puffed rice. We also have fish head with "Moong Dal", which is basically pulses cooked with a slightly pre-fried Fish Head, with condiments.
the banana leaf apolo is no doubt one of the best indian fish head curries in singapore. anyone who has a chance to try this please do, and dont forget the butter milk chicken omg! great video as always Mark!
one thing I've noticed ~ When you taste if you close your eyes and tilt your head all the way to right and nod your head, that means the food is superb, if you just tilt your head slightly and nod your head, that means very nice, if you just nod your head means either not as good as expected or just acceptable... :P

Mark I heard a different story about the history of fish head curry it was a man went into an indian restaurant to eat & asked for a fish curry but the owner never had any of the fish left but just the head so he served the man that & he loved it so much that he told everyone about it & they too went into the same restaurant asking for the same dish & it took off from there, However it started it sounds like a beautiful dish, Keep up the great video's mate.

Although I haven't been in Singapore for some time, but I have been a regular at Banana Leaf Appollo for some umpteen years. I was also regular of Mutu Restaurant was a long time before my son persuaded us to change to this restaurant.

Mark, you are one of the great gourmets! Your enthusiasm for the sublime Fish Head curry is perfect! Whenever I go to Singapore, I also head straight to Banana Leaf Apolo or to one of the other great places and I have Fish Head Curry, too.
This is a "10" based on Mark's reaction - I mean he did the full closed eyes, tilted and bowed head and then lifts up with eyes wide open signature move when he loves the food; none of that head shaking reaction - that just means its okay. If he does this - guaranteed - its THAT good!
i was there a year ago with my partner and her son, i watched this video before i went, and had to go to banana leaf, we went the very first day we landed into singapore and its the first place i wanted to eat, and it didnt disapoint, we had the fishhead curry of course

i have come here after seeing u eat bak chor mee noodles.
