I dont think alot of the changes have anything to do with it being a "kids show" but more like writing the game version of cuphead would be super boring as nothing really happens and the bosses aren't proactive, and nothing really happens to you when you walk from boss too boss. Also writing the changes off as "for kids" is super weak, because over half the show is mugman and cuphead either trying to scam, steal, or murder the other characters, even a child would know dropping something heavy on a glass would break it, like how mugman tried killing cuphead, also bowlboy nuff said.
It's for kids like in the sense that Donald Duck War cartoons are for kids. Really, people nowadays see anything animated and water it down as 'just for kids'. But to be fair, most kids cartoons nowadays are very safe (or what parents consider as safe) and therefore the family-friendly nature could be quite annoying. Remember when guns, cigarettes, and creativity were allowed in childrens media? I miss that.

Plus, the entire bowl boy episode was just creepy all together. They definitely toned up the mature themes in season 2. I actually have a theory for some of this, Ribby and Croaks, the finger bullets, the fact they broke Brineybeard's legs, and the way the finale ended with the casino, I'm willing to bet the entire show is one big prequel to the game. Now that would raise the question of if that were the case wouldn't Chalice and the cups already know each other in the game but still, it explains a lot don't it?
The only other cartoon show's I can think of that hard ridiculously hard games + with friendly kids show's are: - Earthworm Jim - Battletoads - Mega Man (The Ruby Spears series)

In the game they had to drink a potion to get the fingers guns sooo.. Porkrind in the game is a friendly shopkeeper, who welcomes the cups into his shop, while he is mostly annoyed, and hates the cups in the show.
MAYBE it's worth waiting another seven or more years to paint the ALL shows in a uniquely vintage and elaborate style.
