I dont think alot of the changes have anything to do with it being a "kids show" but more like writing the game version of cuphead would be super boring as nothing really happens and the bosses aren't proactive, and nothing really happens to you when you walk from boss too boss. Also writing the changes off as "for kids" is super weak, because over half the show is mugman and cuphead either trying to scam, steal, or murder the other characters, even a child would know dropping something heavy on a glass would break it, like how mugman tried killing cuphead, also bowlboy nuff said.
It's for kids like in the sense that Donald Duck War cartoons are for kids. Really, people nowadays see anything animated and water it down as 'just for kids'. But to be fair, most kids cartoons nowadays are very safe (or what parents consider as safe) and therefore the family-friendly nature could be quite annoying. Remember when guns, cigarettes, and creativity were allowed in childrens media? I miss that.

Plus, the entire bowl boy episode was just creepy all together. They definitely toned up the mature themes in season 2. Grim was already able to breath fire without turning his head to a flamethrower, and you showed that footage several times. And were you really saying that a finger gun, a thing kids do, is too mature for kids? As it ain't a snap, it is just a finger gun
Not sure if this is true but i heard the shows story was before the games story so cuphead and mugman are kids in the show and after the show thats where the games story came in as the cups grew to kidults old enough to go into a casino (the casino opens after the show)

I actually have a theory for some of this, Ribby and Croaks, the finger bullets, the fact they broke Brineybeard's legs, and the way the finale ended with the casino, I'm willing to bet the entire show is one big prequel to the game. Now that would raise the question of if that were the case wouldn't Chalice and the cups already know each other in the game but still, it explains a lot don't it?
