The muslim says the Qur'an is so eloquent it could only have come from God. If this is so, how do they explain the many other Qur'ans that still exist but have been abandoned by muslims. Who decided which Qur'an was the correct one (was it possibly a man)???.

Humans, well, humans with any sense, do not do this day-to-day and as such, there's no reason to apply it to theological discussions either, especially when evidence and reasoning to the contrary is available.
The truth is the truth. It is an absolute, and we have mental faculties to work this out by observation, pattern recognition, and so forth. I would never throw all of this under the bus, for some other man to tell me how to think and what to say. It is my perogative whether I take on board what he says or not, but in no way would I place total dependacy on him because humans are fallen beings, guilty of sin and therefore any of my teachers will suffer the same battles with sin and error that I do in like manner.
Christians have the Holy Spirit, God's spirit, the Spirit of Truth and do not rely on private interpretations *because God is not a man that He should lie.*
This may be a major long shot, but you need to think this through properly. Islam is a major heretical error and has more in common with the heresy known as gnosticism than it does with Abraham and the Lord Jesus Christ.

Key to attain the Eternal Life is thru God Merciful by;
1. Belief in Him.
2. Show your gratitude by worshipping Him, follow His Commands and the guidance from His prophet - Mohamad (pbuh).
3. Repentance - Ask Him for forgiveness if you are sin
In the Bible Ezekiel 18:20-21 God says " The one who sins is the one who will die. The child will not share the guilt of the parent, nor will the parent share the guilt of the child. The righteousness of the righteous will be credited to them, and the wickedness of the wicked will be charged against them. But if a wicked person turns away from all the sins they have committed and keeps all my decrees and does what is just and right, that person will surely live; they will not die.
