Asian beef tastes a bit less of iron as they bleed the meat whereas the UK do not.
I find it hard to deal with too at times, so one way to deal with slow roasts are to submerge the beef pieces into water a few times, but for mince adding alcohol helps a lot.

American here. You don't want to press the patty after you've started cooking it because the juices run out and the meat will be more dry. It's better to shape the patty with a "well" in the middle because, as it cooks, the ground beef will seize up and you'll end up with a level burger without needing to press it down. Or you can try a smashburger by flattening the meat on a hot pan immediately so that it sears and doesn't lose any fluid, but you don't press it down again when it's flipped. Pub-style burgers-- such as the viral cheese-filled burgers-- are formed into a normal patty shape before cooking and then become more rounded because you don't press. This allows the cheese to stay as a single pocket in the center instead of melting into the meat.
