Great setup I do the same. I have found though I get a better mix ratio if I grind the meat first, then grind in the fat, then do the fine grind. Not necessary at all but I just prefer it that way. Also I tape the bag like you did, but then I do a bend in the bag and do a second tape. I know my method takes more time and more tape but I found it to result in no leaks. The fat in the mix makes all the difference though.
