The analyser calculates combustion efficiency by comparing the temperature of the boiler room (inlet temp) with the temperature of the flue gases. When you turn the analyser on it takes the inlet temperature reading from the probe and stores it. After that it switches to reading the flue temperature. You could also connect another temperature sensor so the analyser can read both temperatures in real time for better accuracy.
Also open/natural draught flued gas appliances should really be negative pressure tested on cold draw to rule out combustion gases being pulled back into the room with exhaust air etc
Perhaps you need to set up your 02 calibration because as you say you should be reading something for 02 and excess air. Air will have approx 20.9% 02 for a reference.
Should get the cat 85 fieldpeice it's nice. Also I think at 84 percent flue gases will start to condense rust up flue . Pretty sure you gotta drop that down some. Closer to 80
Also, if you want your meter to last a lot longer, let that carbon monoxide run up high and come back down to get a good reading otherwise you’re just gonna saturate your meter and keep having to replace the sensor so let it warm up first and drive back down before you put probe in vent

Omg galvanized sheet flue pipes? In Europe (greetings from Poland :D) acid-resistant steel is used and such cases never occur. Well, every country has different laws ;)

Does that boiler have NOx catalysts? If so, that might be the reason for lack of free O2 in the flue gas.

@david-ml1be looks like a badged up version of a 'kane 358' analyser we use in the uk, they have a solid reputation.
