For an extra smooth melting pecan pie I recommend replacing the eggs by melted chocolate & cream then seting the pie to cool in a fridge after cooking it. Got the idea by trying to reproduce the very expensive pecan pie from the local french bakery and it elevates the pie so much imo

I recommend to anyone wanting to make this to either make only two thirds of the filling recipe OR have a small loaf pan, some mini pie pans, or two ramekins or something available, because you will have extra filling available, and would be a shame for it to go to waste. I just rolled out my excess crust into a crust for two 4 inch cake tins, used the rim of the tins themselves as kind of like a cookie cutter to measure it out, and made two mini pies that way. The crust only covers the bottom of the tins. (It was not enough extra crust to make it up the sides, but by all means, do that if you have enough) The two mini pies were done baking 20 minutes in.
As my dad would say “I don’t care how it looks. If it tastes good, that’s fine.” Or my absolute favorite one “It’ll make a turd.” 😂 That looked so good!

I like to gently press finely chopped nuts on the sides and bottom of the crust before adding the whole nuts and filling. Every bite is nutty that way.

Ingredients: • 1 pie crust • 1 1/2 chopped pecans • 1 cup granulated sugar • 2/3 brown sugar • 1/2 cup softened butter • 1/4 all purpose flour • 1/2 tsp salt • 1 cup Buttermilk • 3 large eggs • 1 Tb vanilla extract Instructions: • Preheat oven to 350° F or 180° C • Roll out pie crust and line a 9in (23cm) pie pan. Pour in chopped pecans and set aside. • In a large bowl, blend granulated sugar, brown sugar, butter, flour, and salt together until well combined. • In a separate bowl combine Buttermilk, eggs, and vanilla. Then add to butter and sugar mixture. • Pour the filing on top of the pecans and place in the oven • Bake for 1 hour 20 minutes or until set • Let cool for several hours before serving. • Store in fridge, loosely covered, for up to 2 days. Here's some of my personally recommended tips: • Depending on the size of your pie pan prepare 2 crusts and twice the chopped pecans, keeping the amount of filling the same • My oven runs a bit hot and the pie(s) is done at 50 minutes rather than 80. I recommend keeping a close eye on the pie(s). • If you want a nice golden crust cover the edges of the pan with tin foil, just covering the exposed crust, and remove the foil 10 minutes before it's done baking. • This easily converts to a gluten free pie if you have a good cup for cup replacement flour. • As decoration it is always a good idea to use leftover whole pecans on top. @otiosepepper2034

Pecan pie reminds me of a giant butter tart. They are basically the same but a butter tart doesn't have the pecans, and honestly they're way better. Just saying… pecan pie is fine, but us Canadians know what we're doing with our butter tarts.
