      It's an understandable idea I think - if you let Coca Cola (or any soda for that matter) evaporate, all that is left is extremely thick, very dark, somewhat burnt caramel-like syrup.

    I used to work in soft drink manufacturing, not for coke but we did own brand versions of things. The recipe isnt so secret, its more the flavourings are trademarked and you are only allowed to make something that tastes sort of like it. Thats why when someone tried to sell pepsi recipe to coke they sent them on their way.
    Coke, and other soft drinks, aim for 10 brix. In the UK we'd use glucose syrup as the base, US likely hugh fructose corn syrup, you balance with acidity, a combo of citric and malic acid (coke may not defo use the same ones). As an acidity reglator trisodium citrate is added. Colouring would mostly be malt extract, but super concentrated so you only use a little. But again cola might use this burnt caramel, own brands tend to avoid artificial flavours and big brands dont care.
    Flavours are 'coke' and 'coke nut extract', the latter being white and opaque. Then ofc preservatives - usually potassium sorbate as its heat stable and flavourless. Coke will add caffeine but generally own brands dont.
    Great video though! In industry sometimes we'd do something like this, or if its a more lucrative contract, whap it through a mass spectrometer 😅

      Yeah that story about the recipe being stolen from Coke was crazy. Pepsi acted interested and got the feds involved and actually caught the people. I always suspected some reasons that make sense but I'm betting you're on point. That Pepsi COULDN'T make their recipe because if it tasted exactly like Coke then they would sue.
      Seeing the label in this video was crazy too because it has a little more to it in the US. Like it has "Caramel Coloring" as an ingredient. Unfortunately you are right about HFC. They put it in everything. To the point that if you have a sweet tooth it's kind of scary. Pepsi used to release "Throwback" which had real sugar and a more classic recipe and it did so well that now you can find "Real Sugar Pepsi" in cans at most major stores. Otherwise for Coke some places (like here in Miami FL) you actually get "Mexican Coke" which is literally that it's imported here and has real sugar in a glass bottle. If you tell me it doesn't taste better than the regular US coke I will know you are not a human being.
      So another soda question if you have managed to read this much OP, does the kola nut and the coca leaf even matter anymore? I know Coca-Cola is actually allowed to grow the plant and the government takes the cocaine part (it's used in medicines) and I've heard they have found a way to grow the leaf without the active ingredient that makes cocaine. I ask about the kola nut also because Pepsi had a crazy like "1897" limited release and it had 2 versions and I remember liking the black one and it made sure to mention the kola nut. Thank you!       @@LudaChez thanks so much for reading! The coca leaf thing is crazy - the export ban also was horrendous to the Peruvian economy. The sugar thing is really interesting - makes me think of Irn Bru (scotland is the only country where coke isnt the no1 sellin drink). When they had to reduce sugar due yo sugar tax folk were so outraged they reintroduced a higher sugar version with a slightly older recipe & put it into glass bottles. Sounds so similar to real sugar coke! And it is a million times better.
      I'm not sure where coke actually gets their flavours from - it could be that some of the flavours are still derived from a coke nut etc or it might all be artificial. So I'm not sure is the answer!

      @@onethingafteranother irn bru is popular here with the Latin community like Materva and Iron Beer. (MAH-Te-bah) and (Eee-ron Bier) is how the Spanish say it here so that's always funny. Irn bru is made as well and found some places (I swear I saw it as Iron Bru but maybe that's my brain putting the O in). The Cubans here in Miami and many other latins here love all those beverages along with like Jupiña. Unfortunately I can't stand it. I feel bad as most of my friends are from many places in the Carriebean and south America and they bring those for me sometimes and I just say "Ohhhhh thanks" as I'm too white to enjoy them I guess. Champagne sodas are big here too. It's crazy how regions dictate what a place sells. My best friend used to stock sodas for Coca Cola and he told me that they stock places bases on pure stereotypes and that always made me laugh.... And then think.

    Brazil has a slightly different labeling law. So in mine it says the acid is " phosphoric acid" and it has nut of cola extract. Also caffeine (which is basic, may reduce the acidity), caramel IV food coloring (i'm sure there is a book somewhere that tells what this is in more detail) and a vague "natural flavor".
    So, i imagine reading multiple countries labels may give you more clues.

      The ingredients may actually be different. Australian Coke looks like it may be more similar to Mexican Coke than American, since it uses sugar rather than high fructose corn syrup. So much better. On the rare occasion I drink Coke I get a glass bottle of Mexican Coke. Worth the extra cost.

      Well it was _originally_ invented for military purposes. But then it became a resource for scientists; so considering Ann is a food scientist I reckon you’re probably right.

      If you want your mind blown by history there is a video by Douglas Englbart from 1968 demonstrating things like the mouse (no, Apple nor Xerox invented it), networks, word processing and so forth. He also verbally describes some things that we would recognise as part of modern computerised life today.
      Let me just emphasise this is 1968.

      In that vein, this video is pretty much exactly what the internet should be.

    This is very cool. I am part of the Open Soda group. We spent many many years trying to create a great tasting cola as well as many other flavors. Our group is an off shoot of the original Open Cola recipe but we reformulated it a lot and improved method(thanks to the defunct Cube Cola in UK). Our flavor is some where between Coke and an American brand called RC. I have several notes on your attempt if you are interested.
    The acid is VERY important to your flavor. For the right flavor you need Phosphoric acid, which is hard to get and hard to get in small quantities. I know you said you were waiting on an order. Maybe you are going to get some. But you defiantly need some kind of acid.
    Next big one is, flavor oils don't like to mix with water. Maybe you did something to get them to mix that wasn't filmed or that I missed, cause i didn't see your oils separating and you didn't comment about them being on the top. We use gum Arabic, hopefully you know about blooming it, other wise defiantly look into that. We managed to get out hands on the professional pre bloomed stuff by just asking for a sample(which lasts us for years). Then you have to get the flavor oils to break down into very tiny particles. We use a whisk on a drill! Also oil is alcohol soluble, so just a TINY amount of vodka helps too.
    I caught that you put salt in, which is not a bad plan. The sodium listed in the ingredients comes from Sodium Citrate and Sodium Benzoate. The 1st boosts the flavor a bit and the second is just a preservative. So salt is a good at home replacement.
    Lastly, you didn't carbonate any of them(that you talked about, but I did see bubbles in the glasses so maybe you used soda water? ) so hopefully your flavor testing was against flat coke.
    What we have found is the major flavors of soda are - Lemon, Lime, Orange, Grapefruit, and cinnamon(technically what we get in the states is cassia). I know that sounds really citrusy, but when you blend them together well, it makes a very good cola.
    We have also found if you put angostura bitters in coke, it tastes just like pepsi(but bitter) so what ever pepsi's secret ingredients, is also in angostura's secret recipe.

      I always thought it was obvious to everyone that coke has a lot of cinnamon flavour in it! It overpowers the citrus and caramel especially when the coke’s gone flat - it plain tastes like sugary water with cinnamon in it 😭
      I think the key herb in Angostura is gentian. I wish coke had a more herbal taste, the sugar was appealing when I was a kid but now I’d much prefer just a bit more complexity.

    I find it really weird how simple the labeled ingredients are there. Here in Brazil is: carbonated water, sugar, cola nut extract, caffeine, caramel IV coloring, phosphoric acid acidulant and natural aroma.
    It specifies which color it uses, that it has cola nut and its more nut extract than caffeine, which aciduland it uses, and that all the secret ingredients combined under "Natural aroma" do not make up more of the product than the coloring or the acid.

      They clearly have a different formula for Brazil. I don't know if the Kola Nut extract would have to be specifically mentioned in the US, it might be OK to call it a natural flavor but I'm not sure, but caffeine in both the Australian and US versions of the ingredients are both last.
      US: CARBONATED WATER, HIGH FRUCTOSE CORN SYRUP, CARAMEL COLOR, PHOSPHORIC ACID, NATURAL FLAVORS, CAFFEINE
      Actually I looked it up and Kola Nut can just be called a natural flavor in the US, but still the caffeine being in a different spot is still saying it is probably different recipe. Natural flavors being in a different spot can be accounted for by the Brazilian ingredients specifically mentioning the Kola Nut.

      @@rogervanaman6739 yes the recipe is different depending on where its made. The US for example uses corn syrup instead of sugar and soda hipsters have to buy mexican coke cause they think its the only one that still uses real sugar, when in reality is just US coke that doesn't use it.

      @@matheusm.santana6527 The other thing the purists can do is go nuts before and during Passover when the US manufacturer makes it with sugar because corn syrup apparently counts as leavening to Ashkenazi Jews. Yep, Kosher for Passover Coke doesn't contain corn syrup. I know people who buy up as much as they can get every spring and ration it out for as long as they can.

      @@matheusm.santana6527 It isn't that Americans aren't aware that most other countries use real sugar instead of corn syrup. Coke imported from Mexico is just more readily available than imports from other countries, especially in the southwest parts of the country. "Mexi-Coke" is available at most regular supermarkets for about the same price as the regular US version. Imports from other countries generally are not, and likely cost a lot more when they can be found.

    In the US they call out the dark-brown color as being "caramel color," so the burnt caramel syrup is almost certainly spot-on.
    One ingredient I was surprised you didn't try adding in is nutmeg. Many of the recipes I've seen call for that.

      Back in the 90's Crystal Pepsi was popular for about one summer. I'm not sure if Coke ever tried to compete with it. It was just Pepsi without any color, tasted the same.

      I've never much enjoyed coffee or a lot of soda, but I do like tea. I never noticed the taste of caffeine between herbal, caffeinated, and decaf, but I can feel it in my mouth. It has an almost dry texture. Also it gives me a stomach ache 🙈

      My son was born prematurely and had heart problems, so the clinic decided to administer caffeine to a two pound baby. I was curious 25 years ago and tried what they gave him, it tasted 100 % like lemon to me.

    Definitely an interesting watch, the sheer amount of sugar involved is terrifying though!
    I find that caffeine does make a difference though, it has a certain bitterness that's more noticeable by its absence than a taste. Just an observation from someone who has, rather begrudgingly, had to reduce their caffeine intake significantly. Apparently one cup of drip coffee every 20 to 40 minutes for 9 hours a day isn't good for you. Who knew, right? :P

      Caffeine does, indeed, have a bitter flavor and I bet this impacted their results. I've had a little bit of caffeine powder and don't recommend it, despite the fact that I do love black coffees.

      The bitterness of caffeine is part of WHY they need so much sugar! personally I can't stand the taste of caffeine, and didn't even realize that was why I hated Barq's when I enjoyed most root beers until I found out in college that it's caffeinated

      @@handsoffmycactus2958 Those use sweeteners that are molecules that look like sugars many kinds, if it ends in -ose it's a sugar), but are not absorbable by our bodies since we lack the enzymes to break them apart and use them for fuel. Thus our tongues recognize them as "sweet" but we get no energy from them, it's also why many of them have additional unpleasant "after tastes".
      Oddly, most of these sweeteners are much "sweeter" than glucose (the base sugar molecule you use for fuel), or even sucrose (cane sugar) and as such a smaller quantity can be used to cover the taste of caffeine.
      Be warned, some "fake sugars" are so indigestible, that an excess of them will cause extreme digestive distress as our bodies attempt to discard them as quickly as possible.

      @@mwater_moon2865 Plus the body tastes the sweet taste and assumes sugar it can digest so releases insulin when its not needed which can over-stress the whole insulin response thing and as a result it often worse than sugar for managing diabetes (in particular type 2). So all these drinks switching to sweeteners to beat the sugar tax being put in place because of fears around an increase in diabetes in the UK is actually exacerbating the issue not making it better.
      And I can't have aspartame either because it triggers my manic episodes (I have bipolar disorder).

    Coke syrup tankers must placard as an 8 corrosive. That means it's alkline. At least an 11 on the PH scale. The recipe is split in half and the syrup is made in Dallas and trucked to New York to be mixed with seltzer or whatever the second half of the recipe is. My dad used to drive tankers for Coke. Also we use Coke as a deiceing agent here in the US. I hope that helps.

      Class 8 corrosive does not necessitate that the syrup is alkaline. If you look at the safety data sheet for Coke-cola classic syrup it is ph=2 - 3.3 which is an acid.

    This was hilarious! I loved watching Dave just go ape with it like a kid in a sweetshop/ with their first chemistry set.
    One thing I do wonder is if you might have got an answer to the acidity question by tasting them before and after carbonating with a soda stream? When I make cordials to act as mixers for sparkling water vs plain water I have to add way more sugar due to the _carbonic_ acid from the carbonation process. Even once it goes flat, sparkling water still has a distinct aftertaste - maybe that was the flavour component you were missing?

      One thing in wonder as well is if the floral notes is from the sugar itself. Given that in “Mexican” coke it specifically uses cane sugar which both raw cane and turbinado sugar do kinda have floral notes.     I am severely allergic to nutmeg and I can attest that coke definitely has nutmeg in it. I cannot drink it.

    Gotta be honest, I really hate that label on coke. "flavour" tells you nothing, and in a world where you can be allergic to virtually anything, accurate food labels are important.

    Here in the US, the ingredients label is as follows:
    Carbonated Water, High Fructose Corn Syrup, Caramel Color, Phosphoric Acid, Natural Flavors, Caffeine
    The big one to me here is Phosphoric Acid. Just like citric acid, I feel like a very small amount of it would have a huge impact on the flavor of the beverage. I also wonder what “caramel color” means - it’s unclear if caramel is an adjective to describe the intended color, or if it means that the color is derived from a caramel or something that has caramelized. The more I think about it, the more strange it feels that manufacturers can get away with such little transparency about their ingredients… is an update to the regulations in order?

      well the original coca-cola recipe DID have coke in it (hence the name), so, not entirely inaccurate!

      To be fair; When put in two glasses and asked which is Coke, many people will say Pepsi is the Coke. So they do taste pretty similar. Only, Pepsi is better. ;) (It doesn't have that metallic meh aftertaste (totally in my opinion)).
