Yes it absorb better ,but not low glycemic ,never then we wouldn't be making gluten free sourdough bread ,yes go check it .I do live off wheat sourdough but had to be away from that i only do gluten free now ,have hormones imbalance.
Why would anyone feel guilt for eating bread in the first place? Please stop associating guilt with food. There are only more healthy and less healthy foods.

i had to throw away all the sourdough because it feeds any current bacteria or inflammation you may have in your body.
