    I’ve been making sourdough bread for 15 years. There was nothing as clear as your presentation available to amateurs for the first ten of those years. Your process is clear and fully developed. It works. I had to discover much of what you present here by personal trial and much failure.

      I’m just starting my starter, and I’m wondering, I’m going to be making a lot of sourdough bread, do I need a breadmaker ? I don’t have a mixer nor have I ever made or used any of these; do you think a breadmaker helps with kneading ? Or use a mixer ? Thanks ! ; )

      If you use this method, no bread maker is necessary. Just your hands for a little bit. You only stretch & fold a few times. @@blessisrael6455

      Hi, no you don't! You can make up to a dozen loaves a day by hand, without a mixer or bread maker

      You often don't knead sourdough, only yeasted dough. Instead, after mixing everything, you'll do occasional stretch and folds, maybe 3 sets every 30m into bulk formation. (With yeasted bread, you'll mix everything and then knead for ~8min, then leave it alone for the rest of bulk formation.)
      Before getting into sourdough I would recommend mastering yeasted dough, and watch lots of videos. I started with a channel called the Chain Baker on TH-cam -- he breaks every step down and makes bread baking so much easier to understand

    Thank you... I am not new to sourdough but guessing I got lucky the first time I made a strong starter.. I had let my starter go when I moved and didn't think much of it at the time... I have all but all given up trying to make a new starter for the past three year coming to the conclusion my house was just haunted (LOL). I came across your trouble shooting your starter series and came to the conclusion that i was just experiencing an off ph balance issue. I thought again my starter had died doing nothing, but kept at it with 3 more days of discards and feeding with the 1:1:1 FEEDING SCHEDULE. It took 12 days to finally get a steady rise and follow.. The rubber band technique is genius. Just made my first loaf in this house after 4 years... I appreciate your video.

    Another beautiful video. Making sourdough bread makes me very happy and even though my husband and I rarely indulge, our neighbors and family are happy recipients of my bakes.     I used to make all of our bread w a "no knead" recipe, which was always delicious, but not nearly as pretty as yours. And I could never figure out how to practically use my proofing basket.
    I abandoned our starter when we became "empty nesters".
    You've inspired me to go back to it, even if I end up giving away the bread often...❤

      I'm working on my first starter... ever.... I so want this to turn out. I just got done mastering a simple recipe using store yeast but wanted to know how to make bread if the supply chain breaks down further and we can't buy yeast or if hyperinflation hits and they charge $50.00 for it!

    UPDATED REVIEW AFTER BAKING THE BREAD
    many thanks again for such precise instructions
    I made the bread yesterday throughout the morning and put it in the fridge until early today when it was baked
    It was difficult to wait to cut it but I managed 1,5 hrs of cooling time ( probably needed a tiny longer to be fully cooled inside) It was beyond delicious and worth the time it took. I followed the video and the written recipe alongside. The brad had beautiful even air pockets and when biting into it felt bubbly almost like a crumpet. Again very worth the time. Now that I have done it once it will feel easily to do the steps without so much double checking

    I am very new to sourdough bread making. I've spent the last month, carefully babying my starter and discards. I've read dozens of recipes and watched videos. BUT, your video was absolutely the most comprehensive, clear, and to the point. I made my first loaf yesterday, while watching your video. Kept replaying parts to be careful with the slap and fold, stretch and fold, etc. I put it in my oven on proof; I was sure I had messed it up because it seemed to take forever to rise. But after 6 hours, it had doubled . One thing I learned is that 6 hours was perhaps 30 min too long for the bulk rise. I prepped it, and put in fridge and baked it off this morning - it was so good!!!! Thank you for making such a great step by step video. I am excited to bake more.

    Folks, if this is your beginning journey to becoming a sourdough bread maker this is BY FAR THE BEST INSTRUCTION on how to do it. Believe me when I say that. I have watched many, many others. After watching this twice and trying Adrienne's method I will look no more for another method.
    This is the first method I have seen that combines the slap & fold and the stretch & fold techniques. It makes all the difference to producing a wonderful, workable dough.

    Thank you Adrianna :) I just purchased a Dutch oven, a banneton basket, and a dough scraper. Bread making is labor intensive but now I will have the tools to make a beginner's loaf on a regular basis more simplified. I have an old scale from my Jenny Craig days, which was not built for heavy ingredients. Tomorrow I will make fermented salsa. You are right. This is a lot of fun. Enjoying what you do is a labor of love and I love bread :) I now look forward to what your new video has to share. You're just too sweet to have been a corporate suit. I'd never had believed it if you hadn't said so. You are homegrown and I love it :)

    During the time of the universal C-madness I had started making bread again...with Italian type sourdough (lievito madre) and ever since I do not buy bread anymore or use commercial yeast. I have dried some of my sourdough in a thin sheet in order to have a back-up should it go bad and I have sent it in a letter to friends...one batch to Texas, one to Canada, several to Germany. And I take it with me for longer gold-washing holidays. It has a pleasant smell of apple, even in the reconstituted batches.
    When you start a sourdough, preferably take a flour that is not completely white, but with some bran in it and add a few drops of a sour fruit juice, any will do. This creates favorable conditions for the desired microorganisms.

    My dough was still sticky during the last “pull/stretch-for the final shaping stage. It was difficult to create tension since it was sticky. I did sprinkle more flour then just put it in the proofing bowl. It’s now in the refrigerator and my fingers are crossed it turns out. This video is the most concise/with thorough explanation.

    Following your instructions, I made a beautiful loaf of bread. My oven is not going up to 450 when it should, but I placed another thermometer inside to check the real temperature. It worked great. Thank you.

    Although my first attempt to make this recipe was not as good as it could have been (my starter was weak). The flavor was exceptional. I learned so much watching your videos and feel I can actually achieve success. Thank you for making the directions clear and concise. It took my starter over 2 weeks to get going really good, I almost gave up. I am using freshly milled rye for the starter and will use freshly milled white hard wheat to make the next loaf. So happy your channel was recommended to me. Shalom.

      I’ve been researching to buy sourdough starter, and all the comments say that only the San Francisco starter using white flour works great, with many negative comments on GF and whole wheat starter….etc.
      But, I did notice that people would buy the San Fran one and eventually use Rye or whole wheat; this interests me because I’m not a fan of eating white flour, even though her video of that bread looks absolutely delicious; I’m wondering about the health benefits of eating white flour sourdough bread……. I’m intrigued that a bread can be fermented, and I’m very curious to know how the Rye, Spelt and wheat turn out once the white flour starter settles, and also I bought organic coconut flour which I would LOVE to figure out how to use in sourdough; wonderful video !! ; )

    I have made 3 loaves with other tutorials. The first was flat. The second was much better, but dense at the bottom. The third was wonderful and beautiful. I will make more with your method as I like how precise you are with the shaping. Some tips I learned were:
    1. let the dough rest after the refrigeration process outside of the refrigerator while the oven preheats. 1/2 hour. I got a little more rise that way.
    2. before scoring, spray the dough with water and sprinkle sesame seeds, oats, or barley over the dough. Score.
    3. place a round cooling rack that fits tight inside the dutch oven which raises the dough off the floor and prevents burning.

      First loaf following your instruction was perfect. I will say that a Rye starter is the way to go for a strong starter. And temperature for the starter to grow is really important. I baked at 9400 elevation in Colorado and made zero adjustment to your instructions. Thank you

    I buy sourdough bread from a friend. To save money I thought maybe I would make my own. After watching your video, I've decided this is a lot of work and time !! My friend is a pro and makes it perfect - so I think I'll just save my time and continue buying it from her. Good video though.

    After trying several other bread recipes, this one turned out the best for me. I’m an experienced bread baker, but sourdough is new to me. This one uses some of Bertinet’s method. I believe it works well for the beginner because it has a lower hydration ratio, giving you an easier to work dough to perfect the entire process. Sourdough builds strength differently than yeast based recipes.
    Success! I’ll be making this again a few times before I venture into some variations.

    Great video!! I made my second loaf today following your instructions and it turned out beautiful and delicious! Thank you!!
    The only thing I will say is my dough hardly rose in the cold proof stage, and it was in there overnight for about 11 hours or so. My initial bulk rise lasted about 10-12 hours due to cooler room temp and it definitely doubled in size. The bread still turned out great but it was smaller than expected, your bread looked much bigger than mine!

    Fairly new to making sourdough (just a couple months now) and so far, I have had the best results following this instructional video. Very informative and clear instructions with amazing results. I don't know if it is because of the slap and fold or the overnight proof but after making a loaf yesterday and a boule this evening, even I was impressed with my results! Thank you very much for your help. It is nice to finally have success with my end results.

    OMG I made your Starter from Rye Dark Flour and combined it with Bread Flour and then made a loaf of Sourdough Bread 🥪 followed your instructions to a T it turned out Amazing the taste was Wonderful. I could never develop a sourdough starter with your theral instructions I was able to. Thank You so very much....I wish I could send you a picture LOL 😂

    Wow! I score my boules exactly the same way as you do (not as perfectly though) and had not seen any demonstrations of this method until today. It has worked for me if I do the score just right of center like you did here. Also, I wait a minimum of 6 hours before I cut in to the bread, and preferably 8-12 hours. I have had damp bread when I waited just 4 or 5 hours. PS I use cold start method and it works perfectly. God bless.

    I follow every detail of this video ( except the Dutch oven - I used an iron pot with metal lid covering the tiny holes with wrapped alo foil 😅) it turned out PERFECT! I wish I could share a photo 😂❤ I’m so happy, my first try ever! Thank you ❤
