What amazed me is that she prepared all of this by her self, no kitchen staff helping her ? My favourite thing to do when I visit Japan is to visit random local restaurant like this, so far I haven't have any bad experience yet, but obviously I need a friend who is fluent in Japanese because it's very hard to truly explore Japan without being able to speak Japanese.
Agree. It reminds me a small restaurant in Muroran, Hokkaido back in 1990~93, used to run by a couple. One of their items was deep fried chicken and egg top udon. All together 550 yen (at that time).

冷蔵庫から出してから茹で汁で一回温めているところにお客さんと料理に対する愛情を感じました。
いつも何にも考えずに食べてましたが動画を見て感心しました。
今のご時世、個人経営のお店は大変でしょうけどこういう地域で愛される様なお店は末永く続いていって欲しいですね。

実は、卵とじうどんそばには、大変な技術が必要で、東京の老舗のソバ屋の場合、人が混む昼食時間帯には、注文を断ることあるとか。
卵とじうどんそばの難しい点は、出汁を卵で濁らせないという究極の技術が必要だからです。濁ると出汁の旨味がボケるからです。
完ぺきとは言いませんが、経験でその技術を身に着けたのでしょうね。研究熱心なご主人様だと思います。
私も卵とじうどんを食べに行きたい。

この動画のタイトルを見て驚愕しました、宝仙と言えば私が人生で一番美味しいと思った中華料理店なのです、大将が早く逝かれて奥さんがうどん屋されていると聞いて行ったことがあります、その当時のネットのレビューを見ると唐揚げ定食が人気だと書いてあったので職人気質の大将のそばで料理の下ごしらえをされていたので、宝仙の味を継いでると思い行きました、けっこう薄味だったので当時はこれぐらいで今の唐揚げが濃い過ぎるのかなと思いました、奥さんとも中華料理の宝仙の思い出を話して店をあとにしました、動画アップして頂きありがとうございます。
