@@SmokinJoesPitBBQ Brother Joe the steak the prices vary according to the brand e.g we've the Omaha brand and of course USA PRIME and some other brands which we could find in the gourmet groceries and so ' and the local cuts which I don't buy because the meat doesn't have as much marbling oh and I even managed to locate some picanha lol.

Thanks for a great recipe. My local grocer, Shop**** only 13 miles from my house, has had trimmed flap steak on sale @$3.85lb for two months. My subzero in the basement has 70lbs of it so far and I will keep buying it as long as I can. I call the meat department a day or two in advance and always tip. The next closest Shop**** sells it for $12.99/lb. No other Shop**** has it at all. I'm on the carnivore diet and only eat beef and this is cheeper than 80/20 ground.

Hello Greg! I like to smoke without them but that's because I like to smoke the traditional top down way. If Inadd the tuning plates, the smoker would be a bottom up cooker which is fine but I like using my smoker without them. You just have to really k ow your smoker because you can burn up some food if you're not careful. I'll add the tuning plates for large chicken, turkey, beef cheek cooks. 👍🏼

I often buy a bag of the regular flap meat at my local BJ's or like costco and trim them up myself. Bruh, You do not marinade wagyu meat... just salt and that's it! Marinading or using spice rubs only covers up the flavor and undermines all the effort in raising and butchering the animal for that quality meat.
