I've been a butcher for almost 40 years, and I've gone through a few blocks. I've also restored about a hundred of them over the years. If you do this again, try plain "popcorn salt." It's much finer grain and gets into all the small scratches.

Hello, am in the process of making one for my shop. Does this have to be done everyday? Till now we were using logs. those aren’t practical unless it’s a full length. With cleavers well made blocks should last long, right?

Great to see as so few showing the way to do it. I thought salt and a wire brush would be involved. Any guidance for plastic chopping boards, especially post prepping chicken?

I have recently started using disposable chopping boards for chicken, etc, you can get them online 30 for about 29 pounds. But I wash down with hot, soapy water pre use and after use if using wood chopping boards

@@BrothersoftheGrill Great, thanks. May I ask why you are using disposable chopping boards for chicken? Is it due to how it sticks to the board?

@soothe & sound it's more for hygiene, to be honest. They are fairly cheap.

Try baking soda and vinegar instead of salt
