I have this cookbook and really enjoyed the Gingerbread granola, the balsamic cabbage steaks and the creamy spinach and artichoke soup. This is where I found my go-to granola recipe.

I would love to see how you put together the sourdough whole wheat hamburger buns. I just started exploring with starter and the whole home breadmaking thing instead of buying at the store! Very excited about it.
If your into cashew cheese - try making the fermented version. I use 1 1/2 cups of cashews (soak overnight before blending will make a creamy sauce), and 3/4-1cup of your preferred fermentation starter (I use my ginger bug water): blend until smooth but thick. Put into a container that is covered but breathes and leave out of sunlight for about 3days. Then add in nutritional yeast, nutmeg/any other spices and refrigerate before serving. Unbelievable tang, not really a 'cheese' but it's own thing that tastes SO GOOD!
I love how your kids can point out what they like (or don't like) in recipes. Most kids I know can't even differentiate sour and bitter 😖 Let alone know what texture means. I also love how you tweak recipes to make them healthier. It's so inspiring ❤

🤣love the honest reactions! Have you ever tried Korean Japchae stir fry noodles? It's a dish that I usually make with the sweet potato noodles. Most recipes have beef in it, but it would be easy to adapt and make it vegan.
Those fritters needed a sauce. My preference would probably be a bbq sauce. I wonder if you added some whole oatmeal, maybe 1/4 cup, rather than ground; the apple bread would be less gummy. I think the whole grain might be more absorbent.
Question: With the meatloaf burgers and the zucchini & corn fritters, can these be done in a regular oven??? If so, at what temperature. (FYI: I have an electric stove/oven)

I think the idea of the BBQ was the take-away here, but that's about it. That burger wasn't great :( I would just start from scratch.

The reactions to the beet brownies were funny. I didn't expect anyone to like them. Beets are a pretty strong flavor to bring to a brownie. LOL!
We've made some with beets that were REALLY good before
Instead of coconut milk, I substitute almond milk,a little cornstarch and coconut extract/ flavouring. Works pretty well.
I love a chipotle dip or homemade ranch with my zucchini or corn fritters.

Baking it will give it more of the meaty texture to dry it out a little, etc.... Hope that helps!
