If I listen to Opeth, I listen to them an album at a time. But if possible do 1999 - 2008 stuff first, before you do the earliest and latest stuff.

The part where you talk about dorian is incorrect. The harmony just modulates. It starts in A natural minor then it modulates (in a weird way) to G minor but uses the major dominant with the leading tone.
