"Sargam" is a way of assigning names to musical notes and performing them. None of what Nusrat saab sings in this clip has any meaning; it's analogous to solfege ("do-re-mi-fa-so-la-ti-do") in Western music, or "scatting" in jazz. The Hindustani notes ("svara") are said as "sa, re, ga, ma, pa, dha, ni, sa". Sometimes Nusrat saab says them so fast that they're nearly unintelligible!
