Hii, I've made few vegan recipes and using eggs is a huge problem when it comes to baking. Substitutes for eggs can be 3 tablespoons of peanut butter, 1 tbsp of flax seeds + 3 tbsp water, 1 tbsp chia seeds + 3 tbsp water, half of a banana (mashed and preferably very ripe but ripe also works), ¼ cup of apple sauce. All of this substitutes one egg. So you can double the amount for this recipe. Hope I could help, happy baking! 💗
I tried this recipe today. Epic failure. My ingredients were too dry. Too much flour. I used two large eggs and 125 g of butter the only two wet ingredients.

If you like, you can add 1/2 tsp of bicarbonate of soda for a more spread-out and crisp cookie!

What butter should we use salted or unsalted?
You can use either, just adjusting any added salt for taste. I typically always use salted!
