Jacques demonstrates a step-by-step recipe of Risotto with Vegetables that can make a perfect vegetarian meal. Other dishes include traditional Darphin Potatoes, sometimes known as Rosti potatoes, and an all-American Skillet Sweet Potatoes recipe. Then, in the blink of an eye, Jacques stirs together a very flavorful Middle Eastern Green Couscous. He follows this with a Corn Polenta with Mushroom Ragout, a meal that even meat lovers will love.

    Chef Jacques. ,perhaps I am assuming too much, but your style in the kitchen is so great, I believe we would get along great , just your overall way you do things, in the kitchen. including having that glass of the right wine, after or with the meal.     I have watched this wonderful man so much that I can recognize the recipes in the opening credits. Jacques Pépin is a genuine treasure that has made the world a better place simply by being a part of it. Thank you for all the years of smiles, Jacques.     I'm vegan, but I watch JP more than any TH-cam vegan chef because he really shows the viewer how to use vegetables so effectively.

    When he’s cutting tomatoes… and is mildly annoyed at the dull knife and he casually grabs another to sharpen it.
    So naturally like breathing.
    And he’s definitely not doing it for the camera. amazing to watch.

    This is 2022 and I want to see any video he has made. I would love if he would do a video about his charity work. When he feels like it and if it is not asking too much, I think his reflections on his long marriage and also raising children (he is so comfortable with children). And cooking, he makes us believe we can make cook too, and so we do. Gardening, art, ...is there anything he cannot do! I saw his appearance on Rachel Ray and I could see he so full of life. We all love you, Jacques.

    I could watch him 24-7 lots of grand ideas on the kitchen master chef Pepin. Yes comfort food is what I grew up on. My grandfather was a chef
    He was a sheepherder as a young man in Greece. He watched his mother cook as a young boy. He was able to get a job as as a chef in the local restaurant and a dishwasher in USA and they taught him how to cook,he cooked many rice potato and lamb dishes. My grandmother from Romania wasn't a chef but she could make spinach pies,sweet noodle pies, many lamb,rice,veal, potato dishes veggies lots of squash,eggplant, corn,.....
    I love cooking myself I said someday I'm going to have a big kitchen with all things like Jacque,so I could try out his delicious recipes .thank you master chef.been watching you for years.. 👨‍🍳.I love when your daughter Claudine helps you out in the kitchen.💕🍮🍲🍽️🍴

    Jacques Pepin has such a homely feeling with his cooking shows. I love it. He inspired me for my next two weeks of cooking. My Mum had an operation on her knee yesterday so I've ordered a lot of meat that I will roast and cook for her and her boyfriend (who doesn't know how to cook!)

      ​@@shaylagogobean417 Yesss! All the instructions I've ever seen make it look like it takes a lot of stirring and attention.
      But if it's complex and finicky and hard to understand where something goes wrong, it's not worth doing at home.
      But it's really simple the way JP does it, if you know the amount of rice and water you need beforehand, and _cover_. It's literally just cooking rice with somewhat too much water. He sees the essence of it and makes it happen. Amazing.

    I made my first Risotto tonight using the quick instructions in the intro segment. I didn’t have any fennel on hand, and I added a thinly sliced clove of garlic. It was delicious and all the kids loved it.
    Thanks Jacques and KQED for this upload, and all the others. I’ve been so inspired lately to try new dishes and have been mining all the Pépin videos I can find for ideas. I also have the big Essential Pépin recipe book which is always gold. Going to try Grilled Lamb next week.

    @3:45, I have that same “wonderful “ machine that I hate because it leaks from all over the cover when processing fairly liquid preparations. I should have returned it early on; now I’m stuck with this wonderful POS.

      When working with liquids, try putting a layer of plastic wrap over the top of the mixture/blade area, then placing the lid on. Works for me

    With all the extreme dishes and rock-star cooks out there, Chef Pepin shows us what essential cooking is all about: Delicious Food. I love to cook but this video taught me things that I never would have thought about. Like simple knife technique (going at a diagonal) to how delicious classic ingredients can be like polenta and yam. We are very lucky to have these videos available for us. Thank you, Chef!

      theresa scott ...oh, the butter is very important! Unsalted! And eef possible, from Normandie! Heh heh. I've found one butter here in Madrid almost as good as the ones from Normandy. But always use unsalted (sweet) butter!
