Losing a title fight in a unanimous decision doesn’t get you an instant rematch. The only one who could have asked for an immediate rematch was Thiago Santos, but he couldn’t, because Jon destroyed Thiago’s ACL, MCL, PCL, and meniscus in both his legs.

That thing about athletes wanting to be movie stars and vice versa is true. I'm a musician. Back in the 90s I was in an awesome alternative rock band when my hot girlfriend and I went to Slamboree '93 and met a bunch of WCW fighters. Many of them told me they wanted to be rock stars. I wasn't even a star and they were still fascinated with my bush-league local celebrity status, big hair, and hot girlfriend on my arm. It was interesting, and a really fun, memorable experience. No, according to Wikipedia neither of them were interim champion at the time of the fight. Tony had previously been interim champion 2½ years earlier, but had been stripped of the interim title due to inactivity.
That said, Big Nog defended his interim title (and lost) against Frank Mir at UFC 92.
this certainly isn't the first time. Randy Couture came back and fought brock lesnar when there was an interim champion.

I honestly think beating Stipe once in the cage means nothing, considering the only reason Stipe is considered the HW GOAT is due to having the most HW title defences. That’s what Jon would need to beat to be considered the HW GOAT imo.
