I got all kinds of millets and mixed them into one container. Too late, but this is how I consume dal , mung in the mixed form. I feel mixing would give you a much robust nutritional profile rather than consuming it independently. Our bodies are interlinked that is why a balanced meal is necessary but I could be wrong.

But instead of mixing, I prefer to eat one type of millet one week and another type the next week. And rotate the cycle every month with 4 or 5 different millets.

Millets are to be soaked 6 hours and same water is to be used for cooking as it contains micronutrients. But how about soaking and then drying it for making flour? The flour will lose all micronutrients since we are throwing the water. will the flour contain same nutrients as the raw ones?

If you grind peanut, does the properties of peanut lost? Each particle is having same properties nothing is broken here. Soaking is to absorb water so that it digests easily but does not break anything. Please try to think...
