yes, i use 1kg of mango and 1/2kg of sugar, with 70 % of sugar still in the broth with the mango and 30 % mixed with the mango after the mango is dry enough.

Too much sugar! If mango is ripe it is naturally sweetened and the first round of sugar would have been more than enough to help with candying.
