To dress up the cake a little, I made some candied lemons by using 1 to 1 ratio of water and sugar, brought that liquid to a boil and then added thinly sliced lemons and simmered until the lemons were translucent. Then I placed them on top of the cake. It looked amazing. A brilliant recipe. For those of you who have a 375 or 400g tub of ricotta, just use 4 eggs instead of 3. Worked beautifully. I'm thinking Xantham Gum might be the best substitute if you could figure out the amount. It requires far less than cornstarch when used as a thickener/binder.. If anyone knows how well it would work in place for this recipe I'd love to know.
I tried it, when I took it out of the oven the centre somewhat deflated (it was puffed up inside the oven). Is it normal? Anyway taste and texture were very good, really smooth, I will surely try to do it again. Thank you!
I have an 8” pan-am about to put it in the oven- I’m going to bake it for 40 minutes instead of 50 minutes-going to test it at that time-I’ll let you know how it comes out.

I made the cake it was very good . But it seems a little low . I used 8 “ pan it’s was 1 inch high .was this the right height? In the video seemed higher .
Hi Betsy! Thank you for trying my recipe. My batter was pretty thick. Could it be that the ricotta you use was wetter then mine? If that is the case, it would be best to drain it a bit first. I hope this helps for next time. Let me know how it goes 😉
Hi, I am on my third week of Atkins and cannot use baking soda or potato starch. I have tried baking with both coconut and almond flour, but didn’t like the texture. I once made a cheesecake using Jelly. Do you think a sugar free jelly would work please?
Hi Helen. I didn't use baking soda or potato starch in this cake. You'll need cornstarch or arrowroot powder or rice flour. I don't suggest using Jelly for this cake. I hope this helps!
