Waltz then was Austrian farmers dance. Aristocrats favored minuets, etc., but also Allemand (=German in French) + huge no. of arm positions + arm turns, perhaps even more than in Landler. Minuets, etc. popular dances had little or hand body touching--- partners were often separated.
I know it's late, but I just read a book that described someone learning this dance. I thought, "5th position? Why ballet for a waltz?" So I searched until I could see it performed. The dance looks very much like it was described to me. Guess I'm used to later waltzes.

Was the choreography presented for a particular Ball of the era and if so do you know which one. I understand many royal functions had their Dance Masters develop the steps for a particular ball or musical piece?

You are right ! It was our first attempt at dancing this waltz, and also our first reconstruction hence why I was very nervous ! Now when I look at it, there are so many things to change to be more accurate with the description of the dance and to be more natural. :-)
