Chocolate Mayonnaise Cake Recipe Part 1 - Glen And Friends Cooking

  • In part 1 of our Chocolate Mayonnaise Cake Recipe saga - Glen makes a contemporary take on the classic chocolate mayonnaise cake recipe... So many people credit this cake to Hellmanns mayonnaise, and call it the Hellmann's mayonnaise cake. We'll be dissecting the myth around this cake in future episodes of the old cookbook show.
    Ingredients:
    3 eggs
    400 mL (1⅔) cups packed brown sugar
    10 mL (2 tsp) vanilla extract
    250 mL (1 cup) mayonnaise
    500 mL (2 cups) all-purpose flour
    150 mL (⅔ cup) unsweetened cocoa
    5 mL (1 tsp) baking soda
    2 mL (½ tsp) baking powder
    1 ml (¼ tsp) salt
    2 mL (½ tsp) chili powder, optional
    2 mL (½ tsp) cinnamon, optional
    250 mL (1 cup) buttermilk, or milk, or water
    75 mL (1/3 cup) hot coffee
    250 mL (1 cup) chocolate chips, optional)
    Method:
    Preheat oven to 180ºC (350°F).
    Grease a 13x9” pan.
    Beat eggs, sugar, and vanilla at medium-high speed, until mixture is light and fluffy.
    Add mayonnaise, and beat at low speed until combined.
    Whisk together flour, cocoa, baking soda, baking powder, salt, chili powder, and cinnamon.
    Add flour mixture to egg mixture alternately with milk and coffee.
    Pour batter into prepared pan.
    Bake at 350° for 30 to 35 minutes or until a cake tester comes out clean.
    Cool completely on a wire rack before frosting.
    Spread Chocolate-Cream Cheese Frosting on cake.
    Frosting:
    Ingredients
    1 (8-oz.) package cream cheese, softened
    125 mL (½ cup) butter, softened
    10 mL (2 tsp) vanilla extract
    1 - 1Kg (32-oz.) package icing sugar
    125 mL (½ cup) unsweetened cocoa
    60 - 125 mL (¼ cup - ½ cup) 35% whipping cream
    Method:
    Beat butter, cream cheese, and vanilla until light and fluffy.
    Whisk together ½ icing sugar and cocoa in a medium bowl; gradually add to butter mixture alternately with whipping cream.
    Beat at low speed until blended after each addition.

    Growing up, my mom would buy a little amount of eggs and the oil was reserved for cooking because we were pretty poor. The eggs would be used fairly quickly while the mayonnaise would be the only neighbour to the mustard in the fridge. She would leave my sister and me at home while she worked and sometimes would only come back a day or two later. One day, fairly hungry, I went and read through my grandmother’s cookbook to find a recipe (anything) that we had enough ingredients for. They all needed eggs or milk or oil or meat, etc., and we had none of those. I quickly ended up near the end of the little book to a section I knew well with all my favourite desserts. I found a cake with Mayonnaise written in blue. I found out I had all the ingredients (flour and cocoa powder being remnants of birthday cakes for my sister and I) and this was the first ever recipe I followed. It came out great (with some lumps, but still tasty) and so we ate cake for supper and breakfast the next day. I was 10 years old and now I’m 30.

    Mayonnaise is a very underrated ingredient in cooking and baking. Think about it, oil and eggs. Essential in both cooking and baking.

    Honestly I don't see why people are so disturbed by the idea of a mayonnaise cake. It's basically just egg and oil - pretty normal cake ingredients 🤷 The little bit of acid won't be any weirder than cakes using creme fraiche (or buttermilk in other countries, I guess, we don't have that in Sweden), and creme fraiche chocolate cake is ridiculously moist and delicious. Some mayonnaises have a tiny bit of seasoning, but the sugar and cacao will be more than enough to cover that in the finished cake.

      Baffles me when I scarf down a bucket of ice cream and no one bats an eye, but I eat a whole jar of mayo and the sandwich shop kicks me out

      Filmjölk is close enough to buttermilk for baking (and pretty much everything else), btw! American in Sweden here, and I use fil in the kitchen a lot.
      But, definitely agreed with your main point! I guess a lot of people are strongly associating mayonnaise with savory foods, without really thinking about the actual ingredients.

      😂. I have this conversation with my grandmother frequently. She’s a big fan of mayonnaise cake and has made it for decades. I’m a rational person and I know the ingredients in mayo are basically just eggs and oil… which you’ll put in a cake anyway. But I can’t bring myself to put a smelly gelatinous substance into cake… just no lol. I’m 100% positive I’ve eaten a mayonnaise cake without knowing it was a mayonnaise cake and thought it was delicious. I’ll just never knowingly make or eat one 🤢 . Ignorance truly is bliss in my case!

    I always wonder why more TH-cam chefs don't use that type of beater on their mixer. That little wing scrapes the bowl for you. It's so much better than stopping the mixer all the time to scraper the bowl.

    I love the “it’s probably down in the equipment room somewhere” comment. That feels like a common occurrence when I ask my mom for anything cooking related that isn’t the four pots and pans she uses daily. Slow cooker, bread pan, large mixing bowl, hand mixer, it’s all been “put away somewhere safe.” So safe that it will never be found again. If it isn’t obvious, mom doesn’t cook much.
    I remember seeing recipes for mayonnaise cake in my grandmother’s cookbooks, but we never made them because she considered mayonnaise to be an unnecessarily expensive ingredient for chocolate cake when we had all of the ingredients for regular cake already. The mayonnaise could be put to better use in sandwich fillings and potato salad, at least in her opinion.

    Growing up my favorite dessert from my Grandma was her Mayonnaise cookies, which was a variant of her mayonnaise cake. They stayed moist and soft for so long, even uncovered. This recipe is definitely different (hers didn't use any eggs with it and she used sour cream instead of buttermilk), but it still brings back so many memories.

    Mother used to make a very moist and rich chocolate cake with chocolate frosting, but without mayonnaise. She used leftover mashed potatoes in the batter, and the results did not disappoint. I'm estimating this was around 1957, and, most unfortunately, I don't recall the source for her recipe. It might have been a central Illinois church cookbook. The cake was fantastic!

    I grew up eating Miracle Whip. Once I tried real mayonnaise, I was hooked. I finally got a proper blender, so I guess that I should try making my own for once.

      It can be done with a whisk. It's easier than making meringue or whipped cream.

    Interesting. I learned to make oil based cakes like that (making the mayo-like emulsion at the start) at the confectioner's school I went to. My carrot cake improved a lot after the fact. Now I know where the technique probably came from.

      I am too lazy to melt butter, so light olive oil is the perfect substitute. Cakes stay moist for longer which is a bonus.

    I feel like, in the south, we'd make that a layer cake, add pecans with the chocolate chips and probably do a frosted potato chip crunch layer and somewhere squeeze some liqueur in there... maybe amaretto or Kahlua in the icing?
    It's not noon and I'm ready for cake.

      Çoconut rum cream cheese frosting is what I used on my garbanzo bean banana bread. Chocolate hummus is to die for too. You lost me on potato chips, but definitely pecans!

      @@joantrotter3005 love coconut.. love rum.. not a big fan of coconut rum but with cream cheese.. couldn't hurt to try.
      There's a potato chip cookie recipe that involves powdered sugar.. they get really crunchy.. I imagine it could be done with corn flakes too..I must watch too much bake off - I don't think I'd be looking for a crunchy layer before.

    I make mayonnaise cakes all the time. My recipe doesn’t use any eggs or fat, it all comes from the mayo and it’s super easy and quick. The resume I use is from cooks illustrated and is called an emergency chocolate cake.

    I make my own mayo all the time bc I don’t want soybean oil or canola oil. The down side is that mine only lasts an two weeks on the fridge. This would be a great way to use up the mayo. Enjoy your videos. Thank you!

      What oil do you make your mayo with? I made some with EV olive oil but I didn't really like it, it tasted too strongly of olive oil.

      @@LotusPlant I don't like that strong olive oil taste either. I use a mix of sunflower and light olive oil. A little less of the olive oil.

    Must admit......I've never heard of a mayonnaise cake and almost didn't view this because well, it's mayonnaise...... but glad I did. I must give this a try. Looks very intriguing. And yes I am over 50 and bake. Just was not in my wheelhouse. Thanks for sharing. 🤠

    I grew up making chocolate mayonnaise cakes. Easy to make. Always turn out well. In south central PA, the only thing better than a chocolate cake is a chocolate cake with peanut butter frosting. And that’s the way we almost always made it in my family. Just sub peanut butter for most of the butter. Deliciousness!!!

    When I was a kid I would always, always, ask for a mayonnaise cake for my birthday. So dense and moist. Loved them! She didn't add coffee, or chili and I'm pretty sure she just added a cup of cup and a half of mayonnaise to a box cake but still. This takes me back!

    My wife made a cake that was to die for. Her mother found it in the Grit magazine years ago. It is called Wacky cake. And since my wife was allergic to eggs, she could eat this cake. But it has no eggs. It does use baking soda, vinegar and oil that can be replaced with apple sauce if you so desire to cut down on the oil part. It has become a family favorite for over 50 years now. Always moist and delicious.

    Recently I was attempting to make mayonnaise, it seperated, saved for later then was going to make a cake low and behold not enough eggs so I used the failed mayo instead, it worked, Best cake ever

    Mayo is shelf stable. During lock down I didn't have eggs, but still made cake. Always keep.extra in my pantry

    thank you for this recipe ... now i can make my own version of the cake my grandmother used to make me every year for my birthday ... though hers was layered and had home made raspberry jam between the layers ... and she also would often use sour cream instead of buttermilk -- its been just over 20 years since she passed away ... and i still miss her (and her cooking) to this day!!

    My mom had a recipe book with a mayonnaise cake recipe. I remember making it in around 1970?, but, since my mom never used mayonnaise, I made it with Miracle Whip salad dressing. It was really, really good. I remember how moist and rich it was. I must have been around 12 yrs old at the time.

    Waaay back in newlywed time: Bravely made my first mayonnaise cake for a party of old friends. Used a 9x 13 pan and a ganache type frosting. Guests loved it. Came back for seconds.
    When one of the wives asked about the recipe, I told her it was on the Hellman's mayonaise label.
    The party became silent. Cake chewing stopped. Then shrugs, the chewing resumed and so did the conversations. More visits to the cake with a knife to 'just even it out.'

    This has always been my favorite cake my grandma made. She eats it with a slice of tomato, no icing…. My husband refuses to eat it, but loves mayonnaise 😂

    This is one of those cases where the difference between Mayonnaise and Miracle Whip has to be considered: the spices in Miracle Whip would NOT be a good enhance to this cake! 😂

      I agree. I like both mayo and Miracle Whip, but they are not interchangeably, especially in baking. Not only does Miracle Whip have additional spices, but it has more milk and less oil than mayo. It just doesn’t work the same.

    My very Scottish Grandma who was born in Fergus On in the 30’s was not a fan of mayonnaise cake, “waste of good mayo”. Her everyday chocolate cake was the “crazy/wacky/depression” cake that has no eggs, milk or butter.

    I've heard several versions of the story - my favorite makes the most sense. Making a cake, discovered there were not enough eggs and oil on hand, no time to 'run' to the shops. Mayo is on hand and there by hangs the use. Use what you have instead of moaning over what you don't.

    My MIL taught me how to make chocolate mayonnaise cake except she used miracle whip bc she couldn't tolerate mayonnaise lol! And she would frost it with what was in essence hot fudge sauce only cold. I really like Glenn's take on this too. Gonna hafta try it myself. Gotta say though I was raised on Hellmanns but I bought Heinzs version during the pandemic and holy moley that's even better!!!!

      It is better (and the Heinz jar was nice), but if you can find it, try Dukes mayonnaise. It's a southern brand that's even better. When I don't have homemade mayo, I use Dukes. My Walmart carries it.

    Fwiw, I have one of those tall 3 spout cup measures. It has a pop on lid, so I love it for proofing yeast and "making" buttermilk as well as just measuring. The measurements on it are correct.

    Miracle whip was a staple in my house and we would make a mayonnaise cake with that. It was pretty good. Now I don't use Miracle whip and get something like Helman's. Have not made a mayonnaise cake since my childhood

    This is a recipe that I have been using for about 30 years. It’s called Cocoa salad dressing cake. The ingredients are 1 1/3 cup sugar, 2 cups, all purpose flour, 2 teaspoon soda, 4 tablespoons cocoa powder, 1 teaspoon vanilla, 1 cup, salad dressing. Sift first four ingredients together. Add vanilla and salad dressing. Mix well. Add one cup cold water mix well. Pour into pan baked at 350° for 30 minutes. Frost with favorite icing . Cake will freeze well. The cookbook is called women of the Christian church desserts put out in 1968. There has been only one person who didn’t like this cake. He doesn’t like mayonnaise and he could tell that there was something in it and that’s why he didn’t like it.

    Hey Glen! The issue with the measuring cup thing is called conservation, may have been coined by Jean Piaget but my edpsych classes are nearing a couple of decades ago so I may have credited the wrong theorist. That cake is a work of art, the only thing that was disappointing - ya didn't LICK the spoon!😂 Rocking job as always!😎👍👍

    You guys always make me smile, and sometimes laugh out loud! How COULD there be too many chocolate chips? I'd add a little salt to the frosting, just because the salt amps up the other flavors. (yes, I know that you generally use salted butter.) I can't imagine starting my Sunday morning without your Old Cookbook Show, which is where i'm going RIGHT NOW to see the older version of this cake. Bon Appetit

    Looking forward to the recipe for the classic mayo cake. My grandmother passed down an amazing recipe for Miracle Whip cake that is so moist that I usually make it without frosting. The Miracle Whip creates the leavening--there are no eggs in this cake. (Also, I use mayo instead of MW since that's what I usually have on hand.)

    I laughed when you said that prepared mayonaise was probably too expensive if you couldn't afford eggs and oil. My family couldn't afford prepared mayonaise - so we used Miracle Whip - much cheaper - and still made a great cake. Love your videos!!!

    I never actually heard of a mayonnaise cake before, but it makes sense that you can substitute mayo for eggs and oil.

    I can see mayo lasting longer then eggs or oil. You might buy the mayo one week and not get paid the next week so you needed to make due. That's about the only reason I can think about it. I hope we don't start needing depression era recipes, but something tells me we just might.

    We've been making mayonnaise cake in our family for years, although we actually make the version where the mayo replaces the egg and oil. We frost ours with peanut butter frosting.

    My preferred Mayo for this cake is Miracle Whip or Spin Blend. The extra spice in the Mayo gives it a bit of kick. My boss who does not like chocolate cake, likes my chocolate mayonnaise. My recipe is much simpler.

    Hiya Glen, to tell you the truth I've never heard of Mayonnaise Cake, bad luck to Canada in FIFA World Cup but it's a learning curve for when Canada host FIFA World cup in 3 and half years' time, the Canadian head coach is from near Newcastle on Tyne, I think Glen done a cake recipe from Newcastle on Tyne, keep up the good content, I wish I could go for a pint with You But 3 and half Thousand miles is a long way away, I like Worthingtons were as Glen likes Mild, this is Choppy in Whitehaven, Cumbria, England

    Substitute the chocolate chips for anything. I'd use little peanut butter chips. Hersheys. Nestle. Reeces. Sunspire. There's also DIY ways to prepare PB for baking but why do that when you can just buy a bag of them at the store? Or even actual peanuts crushed up might be fun. Just get that peanut chocolate combo flavor going in your mouth. I'm a sucker for that.

    I'd be curious if using kewpie mayo would enhance the flavour of the cake. Probably not since it's only 1 cup, but it might be worth a try.
