There's a cornamuse in there. Looks a lot like a recorder, but an encapsulated double reed gives it the shawm/oboe sound. I played in both cornamuse and crumhorn quartets in college. But let us never speak of my sackbut, also known in England as the sagbush.

Il est juste dommage que la réalisation ne montre pas très bien les évolutions des danseurs dans la deuxième partie de cette saltarelle. Ce n'est pas précisé, mais cette version musicale me semble provenir aussi des "danseryes" de Thielman Susato.

A much rougher version of the ancient Saltarello dance music is still done by Italian everyday folk now, but wearing much lighter, simpler, easy c to mpove in clothing nowadays than these very bulky, heavy Mediaeval and Renaissance costumes. And all the courtly bowing, curtsying etc rituals are omitted (unless they are just deliberately clowning around).
