I didn't really understand, you said about evaporation of water, but as far as i know that Water of hot temperature decreases its temperature, and go down against direction of air flow and reserved in a tank. Some water mixes with air and make air more humid.
How come in summer the air which its temperature may reach 40 can be used to cool water ?? Specially in Hvac systems this question is in my head for too long
