🔥 Ingredients:
For Marination:
1 kg Chicken
12 Green Chilies (chopped & ground)
1.5 tbsp Green Chili Pickle
2-3 tbsp Fennel Seed Powder
2-3 tbsp Yogurt
1 tbsp Salt (adjust to taste)
Prepared Spice Powder (see below)
For Spice Powder:
½ tbsp Cumin Seeds
½ tbsp Coriander Seeds
1 Black Cardamom
1 Mace Spice
1.5-inch Cinnamon Stick
2 Bay Leaves
5 Green Cardamoms
6 Cloves
For Cooking:
1 kg Basmati Rice (soaked for 30 mins)
1.3 L Water
3 tbsp Oil
1 Medium Onion (sliced)
1 tbsp Ginger-Garlic Paste
Whole Spices:
½ tbsp Cumin Seeds
½ tbsp Coriander Seeds
1 Black Cardamom
1 Mace Spice
1.5-inch Cinnamon Stick
1 Bay Leaf
5 Green Cardamoms
6 Cloves
Food Color (Red or Orange)
Fresh Coriander & Fried Onions (Birista) for Garnish
📌 Instructions:
1️⃣ Prepare the Spice Powder:
Dry roast all the spice powder ingredients.
Grind them into a fine powder.
2️⃣ Marinate the Chicken:
In a bowl, add chicken, ground green chilies, spice powder, green chili pickle, fennel seed powder, yogurt, and salt.
Mix well and let it marinate for 30 minutes.
3️⃣ Cooking the Biryani:
Heat 3 tbsp oil in a large pot.
Add sliced onion and sauté until translucent.
Add whole spices and sauté until golden brown.
Add the marinated chicken and 1 tbsp ginger-garlic paste.
Cook for 15 minutes on medium flame, stirring occasionally. The chicken will release its own juices.
4️⃣ Boiling the Water & Adding Rice:
Pour 1.3 L water into the pot.
Adjust salt and let it come to a boil.
Add the soaked rice and cook on high flame for 8 minutes.
5️⃣ Dum Cooking:
Once the water is absorbed, sprinkle food color on top.
Cover with a lid and cook on low flame for 15 minutes.
6️⃣ Final Touch & Garnish:
Turn off the heat, let it rest for 5 minutes.
Garnish with fresh coriander & fried onions (birista).
Serve hot and enjoy!

✔️ Use long-grain Basmati rice for authentic texture.
✔️ Adjust spice levels based on your preference.
✔️ Cooking on low flame at the end ensures perfect dum biryani.
