    Hopefully you have discovered Panko breadcrumbs. So crisp and light, great on pork, chicken etc. Great recipe. Thank you for sharing.

    i found the best way to get them crispy is one envelope of ranch mix, 1 teaspoon paprika, 1 teaspoon dried parsley for 1.5 pounds of boneless chops. before I rubbed the dry seasoning on, I used olive oil to pat on the chops. They were delicios!

    For low carb breading coconut flakes is a perfect choice to make breaded food. I wisk eggs and then I put whatever I want to bread in the egg-bath first and then I turn it very well in coconut flakes. You can put the seasoning on the protein you choose directly or mix it with the coconut. Sometimes I turn my protein of choice in flour with whatever seasoning I want first, then a egg-bath and then down in the coconut and it works great to fry it in the air fryer on the rack. I usually don’t put any oil or other fat on the food I’m breading but you could definitely use some PAM-spray for example, but spray from a far distance then, because otherwise you either will blow away the coconut-breading or then it will be to fat and won’t get fresh and crispy.
    The other alternative I use frequently, and REALLY recommend is a breading called Panko. That is a Japanese breadcrumb that makes everything you fry become really crispy and so fresh (especially fish, shrimps, chicken). In this choice you can also choose to turn your (in this case) Pork-chops first in seasoned flour, and then you do the egg bath and then last turn it very well in the Panko (with or without seasoning.) No fat needed but you can do the same thing as with the coconut if you think you need it and then you simply put it on the rack or if you’re frying in oil - be careful - just let it slide down in the oil but I really prefer the air fryer, way less fat and pork-chops does already have enough fat in them so no extra fat is really needed.

    Lawry's now has a Seasoned Salt and Pepper together (has a black cap instead of red.) VERY GOOD if you like a little pepper on things. ALos try a new twist with some oregano for a Mediterranean style chop.

    I use almond flour when doing low carb. Just have to be careful how much you use.

    For a crisper batter, many homemade chefs will add a small measure of baking 'SODA', not powder.
