I think it depends on the model series. As I previously sent my iPad to someone to upgrade the storage. But first, you need to backup all your data and keep your iPad in default and factory mode before sending it to them
if anyone gonna replace nands even on old models they aren't gonna use 64 gb nands besides removing nands is a tricky thing and doesn't always works out great soooo its better to remove that way
If I remember it correctly, it's glued with epoxy. You won't be able to remove it safely using heat. Maybe you can score using a knife until it's gone but drilling is the safest way to do it

Plus they often quote you ridiculous prices with nonsensical replacements of entire motherboards and other assemblies even for the most trivial issues. You're likely going to this guy (who does a phenomenal and clean job anyway) if you are considering a storage upgrade.

why are u drilling out the old NAND? wouldn't it be better to backup the sys cfg from it? and repurposing the NAND instead of destroying it?

Ipad nands are welded into the mother unlike andriods where it is soldered so the safest option for motherboard is to be drilled
If you ask why because of security and even in the highest temperature the solder moetals will not melt cause short circuit

This will void the warranty. If any repair arises, Apple will never repair your device again. Be careful. Consider the trade-off's before you choose.

I dont think there's even a 512gb model of the ipad air, the only way to get that much would be to upgrade the nand
