  • Bachar Haikal owns two Lebanese restaurants in Melbourne's South East which has an enormous Jewish population. Almazett is his gourmet Lebanese restaurant. Manakish Levantine Bakery is his new cafe and the setting for a lesson on making hummus in the traditional Lebanese style.

    I have been looking for a humus recipe all over YT. This is by far the best one. By hand for the first time a clear ratio tahini/lemon and the recommendation to serve it warm . A real pro !

      The ratios vary by region, Syrians use more chickpeas than tahini, Egyptians tend to use more tahini, Israeli use equal parts chickpea and tahini while Palestinians tend to add a lot more lemon juice.

    Mr. Haikal: I made Your version of hummus today. I've made a lot of hummus in the past but Your hummus is sensational. The natural instead of creamy smooth is far superior in my opinion. I added a generous amount of Smokey Paprika and crushed chili pepper for a wee bite. Big Smiles CMJ 2018

    I liked the video. A very kind person. I liked watching how he makes his "traditional Hummos", and I even added a "Like", although this is away far from what we are considering a traditional hummus or a "real" hummus. :-)

    walnut oil is very good poured over the hummus sinstead of olive oil, for something different. Then i garnish with a sprinkle of zataar . I liked your presentation very much, you are very a very kind and wise man.I subscribed.

    How long do you cook the chickpeas for them do be mashed like that?

      Kalman hi, Thanks for your question. if you have a bicarb of soda to your cooking water then the chic peas can cook very quickly 30 to 40 minutes. They must be soaked over night first though. However long it takes, the chic peas must crush easily between two fingers when you press one of them to test. Only then are they soft enough to make a smooth hummus. Good luck

      More than likely pickled turnip. The coloring is provided by putting slices of beetroot into the pickling jar along with the turnip

      Thank you! I had to translate the word turnip into Dutch and I know what it is now. Just found recipes for that, going to try that too. Yesterday I made the hummus, the taste is very good but it is not as smooth as I wished.
