If anyone is interested, the way the bile forms emulsion droplets from the fat globule is because of the negative charges on the amphiphatic bile salts are able to scatter the also negatively charged lipids via repulsion. Loved the video, thank you so much.

Amazing videos as always, however I thought that micelles themselves do not enter the enterocytes due to their polar phospholipid heads and that micelles are further broken down into a mixture of fatty acids those will ultimately diffuse across plasma membrane of enterocytes because of their nonpolar nature
Thank you, i got a question you said that micelles have phospholipids on the outside but i read in costanzo that bile salts are on the outside which one is true? Phospholipids and bile salts both are components of bile.
There is a lot more emulsion droplets and the sum of their surfaces is more than the surface of one fat globule containing them because then only a fraction of their surfaces is shown to the outside. Take 27 rubik cubes and put them together in one huge cube, count the squares you see outside on all 6 faces (486 squares), now separate all rubik cubes and count all squares from all cubes (1458 squares).

7:55 Micelle are typically 1000x smaller than emulsion droplets and not 200timez
