Sicilian Sausage Rolls (Tomasini) | Food Wishes

- This is my take on Sicilian sausage rolls, or as our Sicilian friends would call them, “tomasini.” These ricotta cheese and Italian sausage filled spirals may not be that authentic, but they are extremely delicious, and if you use some ready-made pizza dough, they are also very easy! Enjoy!

We've been making two kinds of Breakfast Sausage Pinwheels with Southern Buttermilk Biscuit Dough, one with Hickory Smoked Sausage and the other with Tennessee Pride Mild Sausage for 40 years! You can use Bisquick Biscuit Dough, too. They are great with or without cheese melted on top and served with scrambled eggs and Cracker Barrel Hashbrown Casserole! 😋😉😎
So you make the bisquick dough and roll it out thin like this?
@@Adiera Yes roughly 1/2" thick, and spread the sausage gently and evenly across the dough, roll it up and cut it. Watch them and also your baking time as it varies with how thick you cut them. You want them slightly crisp (GBD - golden, brown and delicious) on the top, done on the bottom and the sausage cooked through. Enjoy!

Hashbrown Casserole (The secret is the soup.)
2 lb. Frozen Cubed Hashbrown Potatoes thawed overnight in refrigerator
1 can (10 oz.) Cream of Chicken Condensed Soup
1/2 Medium Onion diced
2 cups Colby Cheese (8 oz. bag) shredded
1/2 stick Unsalted Butter (1/4 cup) melted
1/2 tsp salt
1/2 tsp pepper
Preheat oven 350°
Grease 9x13 pan with butter and/or oil spray
Combine all ingredients except hashbrowns in large bowl
Add potatoes folding gently
Pour into greased pan
Bake for 45-50 minutes until golden brown and delicious
This may be portioned and pressure frozen once cooled to room temperature.

Oh my gosh, thank you, thank you, thank you for this recipe. My Italian grandma made these when I was little and I regret not getting more of her recipes before she died. My sister and I remembered it being called something else so we’ve never found it. I am so excited! Like you said, it’s the rolling that is the trick. She made her dough & rolled hers like yours to start out, but when she got it halfway rolled she then rolled in from the other side. I think I’m going to try your way first! Thank you so much! We’ve literally looked for years!

My Nonna made these when we were kids. (Though recipe was slightly different) She would cut the rolls using string rather than a knife. I still make the way my Nonna did. Happy New Year!!

These were very delicious! I made my own pork sausage for them, and my husband raved! The next morning the leftovers were warmed and served with runny-yolked eggs. Makes a fabulous twist on a Benedict! Thanks, Chef John!

This technique can be used with other fillings as well! I make a version with braunschweiger, egg, pickles, onions, mustard, and cheese. I occasionally make a pizza filling version. Stuffed/pinwheel rolls are the best.

These look scrumptious. Thanks for all the gr8 recipes and Happy New Year 2u2! I have a burning question: If a recipe specifies both sweet butter and salt, like many baked goods, why not just use salted butter?
So that you can control the amount of salt, I would imagine, and not leave it up to the dairy.

I will certainly make this next weekend. I prefer to add dills or basil than to add green onions. Green onion is too plain. Btw, I think that scissor works better than a knife for cutting dough in this case.
