    I’ve now made clarified versions of the White Russian, Pornstar Martini & the Ramos. Which cocktail would you like to see me clarify next?

    A year ago I'd probably say "What do you mean make this creamy cocktail clear?!". One year of making these episodes and my reactions are pretty much just "Yep, cool." 😂 Amazing work, man!

    This is a fantastic “clarification” of the Ramos Gin Fizz. Never thought of using condensed milk in a wash. Great idea! 🥃

    I haven't tried this recipe yet, but for the part of the aquarium air pump:
    It's less effective, but using a cheap milk foamer (or even a normal stick blender, held at an angle) also works well for generating foams with soy lecithin.
    (Just as a hint for people who want to recreate this but don't have a pump laying around ^^)

    In the UK Condensed Milk is definitely sweetened and is like a thick milk syrup. I think the milk you use is either what we call Evaporated Milk, which is sold canned. Or Sterilised/Homogenised, or UHT MILK, where the milk is heated at a higher temperature than pasteurised, and the process homogenises the fat into the milk. Which milk was it?

    👏👏bravo Kevin! This is awesome. The foam is genius! I once tried to use Xanthan to add weight to a clarified cocktail, but it always ends up making the drink cloudy. Great video as always!

      It's a great additive but hard to get the right amount for the best results since it's not needed a lot of it. I spend a lot of time in the kitchen making this one, especially because of the milk. A drop of it makes the bottom part cloudy. Thank you so much!

    Interested to see what other drink related things you can do with the air pump. This is a neat effect and the pump isn't all that expensive, but it'd be nice if it were not a one-trick pony.

    Could you swap out the air pump for a whip cream siphon or ic whipper?

      You can, but in this case add less amount of foam on top of the cocktail, since siphon foam isn't airy as the one I did.

      You are right! Especially in this one where I added more milk than usual. It wouldn’t give me a clear result but it would add some nice foam. Thank you!

    But to force the air inside the foam, can you use one of those smokers that are used for cocktails (obviously without the embers to avoid creating smoke)?

      The Aquarium air pump is great because it has that stone at the end of the tube which forces a lot of small air bubbles into the mixture. I guess that smoker would work ok but it will create different bubbles. It's worth trying.

    I just curious, is there any usage of the sediment of milk curdle after clarification process?
    While in the fat washed cocktail in your channel, you give recommendation for the "left over" of sediment to use in pop corn.

      Of course. You can try and make some Ice cream with the sediment. It already has a lot of fats so blend it with some fruit that goes well with this cocktail or mix it with yogurt or cream. Thank you for this great question and your support! Cheers!

    Just wonder if using culinary siphon to create the foam makes sense in this case to replicate that smoothie like foam. 🤔

      Siphon would give you different results. You will get thicker foam which I didn’t want here. If you will use siphon then add less foam than I did.

    Oh man, my least favourite part of the Ramos is the non-frothy milky part at the bottom. Can't stand it. But this... this I can get behind. Will have to try it.

    Hmm, if you're putting so much work into it, why not just carbonate the whole cocktail in a sodastream, since you went thru all the work of clarifying it?

      Great point, but because of the whey in a cocktail it's hard to carbonate a milk-washed cocktail. It will turn out foamy.

    Hey Kevin, I really love your videos and I totally understand that English is not your first language, which makes your efforts even more amazing, but was wondering if you could consider presenting in a normal conversational tone instead of your current 'formal' presentation manner so that it's easier to follow what you are saying. Often times, your pauses are at awkward parts of the sentence and it's a bit hard to follow your instructions! Just my two cents and please keep up the amazing work :)
