The apple at 20:12 with a water core problem is a Jonagold, and not quite ripe. Our Jonagolds usually get redder when ripe. Shizuka does not get this blushed.
Thanks, always down for a good apple tasting! I've never seen this vid of yours, but was researching pixie crunch. King David here is top shelf. Definitely in my top 10 and local growers tend to love it. It is a southern apple and extremely resistant to heat and drought. The fruit is resistant that is, not the tree necessarily. If anything the tree seems susceptible to drought, but the fruit stays on and ripens well anyway. Pretty odd. Here it has excellent sugar acid balance and a cidery rich taste. it is so so on either side of ripeness, but the season is long enough. It probably needs the heat. Hang some as long as you can and maybe they'll improve. For me, Sweet sixteen as you say is not that good before it's ripe and the window is short. Once past it's prime, it can become everything everyone hates about a bad red apple lol.

Where are you located? Several US nurseries offer the Sweet Sixteen apple. But most nurseries will be out of stock this time of year (February).
